If you have followed my instagram account for a while then this recipe might look familiar. I posted it there over 34 weeks ago. This should have been one of the first recipes I shared on this blog because it’s always a crowd pleaser. It’s great a main dish, side dish, work potluck, lunch, etc.
There are 7 total ingredients but the keys ones are avocados, chickpeas and cilantro. If you like these 3 then you’ll probably like this. I usually like to buy my chickpeas in the bulk bins and soak them overnight myself but I was low on time so I went with the can version this time. That’s okay sometimes.
Give everything a good mix. That’s it folks.
This is best served chilled so cover and refrigerate until ready to serve.
- 15 ounces garbanzo beans, rinsed & drained
- 2 avocados, pitted & diced
- 1 green onion, chopped
- ¼ bunch cilantro, chopped
- 2 tbsp lime juice
- ¼ tsp salt
- Feta cheese (optional)
- Mix all ingredients together in a medium size bowl gently. Cover and refrigerate until ready to serve.
