I’m excited to announce that I will be partnering up with Low N’ Slow box as their featured Chef for the month of January 2016! They were nice enough to send me the December Low N’ Slow box to try out. It included 2 recipes and all the non-perishable food needed for them. Each recipe served 4-6 people. The December theme was BBQ so I was super excited. I got even more excited when I saw the 2 recipes: Sweet and Smokey BBQ Pulled Pork and Sweet Apple BBQ Whole Chicken. Right up my alley!! The December featured product was Kosmo’s Q. I had never heard of them before but I’m ALL ABOUT supporting small businesses. Side note: the box came with a very large 13.2 oz jar of Kosmo’s Q Killer Bee rub. More than enough for me to use for months to come.
I made the pulled pork first. Sweet and Smokey BBQ Pulled Pork. It came with:
- Kosmo’s Sweet Apple BBQ Sauce
- 1 Can Chilies in Adobo Sauce
- 1 Bottle Virgil’s Dr. Better
- Pork Spice Rub!
- 1 Onion
I had to get the pork and that’s it. 9 hours later…magic. I only used 1 of the chilis in adobo sauce so mine came out pretty mild. Next time I would use an additional one. I’m leaning myself out getting ready for my vacation this week so I eliminated the carbs and served my pork shoulder in between 2 grilled portobello mushrooms.

A couple of days later I made recipe #2. It took me a few days just to eat all that pork! Sweet Apple BBQ Whole Chicken. It came with:
- Kosmo’s BBQ Sauce
- Dried Herbs
- Chicken Spice Rub!
I went out and bought my 5 lb whole chicken and 1 apple. That’s it! I have to admit, I’m not really a pork person. You won’t see a lot of red meat on this blog because I don’t eat a lot of red meat in general. So as delicious as the pork was, I thought the chicken was even better!
Look at that beauty! I did a little ‘frig clean out’. I literally opened my produce drawer and pulled out what I had left. That ended up being carrots, celery, red onion and spinach. Pretty random I know but the star of the dish is the chicken anyway. 6 hours later, the meat was so tender it was falling apart. Which is why there’s no ‘after’ pic. I went to pull this out the slow cooker so I could add some of the BBQ sauce on before broiling and it fell apart. Which happens when you slow cook chicken. I didn’t really care, it still tasted amazing. But it means there isn’t really a pic. For now. We’ll see what I do with the leftovers. Speaking of leftovers, this is what I did with the leftover pork:
Sweet potato fries topped with leftover sweet and smokey bbq pulled pork and cheese. Broil until the cheese is melted. Needless to say I was beyond happy with my December box from Low N’ Slow .
