Ingredients For Crockpot Cajun Chicken and Sausage
- Chicken Thighs
- Smoked Sausage
- Cajun Seasoning
- Bell Pepper
- Onion
- Celery
- Diced Tomatoes
How To Make Cajun Chicken & Sausage In The Slow Cooker
- Add all ingredients to the slow cooker. Stir to mix well.
- Cook HIGH 3-4 or LOW 6-8 hours.
- Turn on the pressure cooker and select sauté. Once hot, add the oil, bell pepper, onion, and celery. Cook 3-5 minutes or until soft. Add the garlic and cook an additional minute. Turn off the Instant Pot.
- Pour in broth and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.
- Add sausage, chicken, diced tomatoes, and Cajun seasoning. Stir to mix well.
- Close lid and seal valve. Set high pressure and cook for 7 minutes. When cooking time is complete, quick release the pressure.
What Type Of Chicken To Use
Personally, I think this Cajun chicken & sausage recipe is best made with chicken thighs. Thighs have more flavor plus they are better suited for the low-and-slow method of the slow cooker. This can be skinless, skin-on, boneless, or bone-in. Other cuts of dark meat like chicken legs or white meat like chicken breasts. If you choose to use white meat, be careful. Chicken breasts cook quickly in the crockpot. If you over cook the recipe, it your chicken will be very dry.
What Type Of Sausage To Use
This recipe calls for smoked (cooked) sausage. As with most of my recipes, I encourage you to use your preferred sausage or a sausage that fits your lifestyle and budget. I tend to use a generic brand of smoked beef or turkey sausage. What you see in the pictures is smoked turkey sausage.

- 1/2 cup onion, diced

- 15 ounces diced tomatoes in juices
