Chili was made for the slow cooker. This whole30 and paleo version uses ground meat, apples, and veggies for a complete one-pot meal.
Apples in chili?? YES. I happened to find some chicken apple sausage at my local Sprouts, that’s what sparked this recipe idea. A year ago. I added Slow Cooker Chicken Apple Chili to my recipe index back in November 2015! And I haven’t made it since. Until this week when I came across some more chicken apple sausage. While the recipe was healthy before, it’s been overhauled to be even healthier. This version is both whole 30 and paleo compliant.
I understand that not everyone will have access to ground chicken apple sausage. That’s okay! A good substitute is a combination of plain ground chicken and chicken sausage. The meat will mostly take on the flavor of the other ingredients and seasonings.
I used white sweet potatoes but any potato or sweet potato will do depending on your dietary needs. You can easily cut this recipe in half or double it. And yes, it’s a great freezer meal.
- 2 lbs apple chicken sausage, browned
- 28 ounces diced tomatoes
- 1 apple, chopped
- 1 small onion, diced
- 1 lb white sweet potatoes, chopped
- 2 large zucchini, chopped
- 1 tbsp cumin
- 1 tsp salt
- ½ tsp pepper
- ½ tsp cinnamon
- ¼ tsp red pepper flakes
- Add all the ingredients to the slow cooker.
- Stir to mix well.
- Cook HIGH 2-3 or LOW 4-6.
