Slow Cooker Cranberry-Ginger Juice

Did you know that cranberries are actually considered a super food? Fresh cranberries are one of the top antioxidant-rich foods. They’re low calorie, low sugar, and full of vitamins. More reason to love them!  What I don’t love is how fresh cranberries disappear after the holidays. They’re at their peak October through December however come spring it’s almost impossible to find fresh cranberries.

This recipe does not use concentrated juice and definitely no added sugar.  I even list honey as an optional ingredient. If you want, you can add honey or (another natural sweetener like maple or cassava syrup) directly to the slow cooker with the rest of the ingredients. Personally, I prefer to leave it out and add the honey to each individual cup if I want it.

Hot or cold? Right now, I’m drinking this hot like a tea. It’s officially December and even though it’s sunny in Los Angeles, I’m fighting off a cold. The combo of hot cranberries and fresh ginger is exactly what I need.

Crock-Pot Homemade Cranberry Ginger Juice

Ingredients

Units Scale
  • 1 cup frozen or fresh cranberries
  • 1 tbsp fresh ginger, peeled & sliced thin
  • 1 tsp nutmeg
  • 1 cinnamon stick
  • 1 lemon, sliced
  • 1/4 cup honey or maple syrup (optional)
  • Lemon for garnish (optional)
  • Fresh mint for garnish (optional)

Instructions

  1. Add ingredients to the slow cooker.
  2. Cover with water, approximately 4-6 cups.
  3. Cook HIGH 2-3 hours or LOW 4-6.
  4. [Optional – mash cranberries with back of spoon to release juice. Cook additional 30 min.]
  5. Strain & stir.
  6. Serve warm or chilled over ice cubes.
  7. Garnish with mint & lemon (optional).

Don’t get me wrong, this is great chilled and served cold. In fact, this homemade juice serves as a great mixer.  Add a few frozen cranberries on top for a nice garnish.

Slow Cooker Homemade Cranberry Ginger Juice

For a stronger cranberry-tasting juice, I suggest you use this optional step: after cook time has completed, mash cranberries with back of spoon in the slow cooker. Even if they’re really soft, you still might feel the cranberries ‘pop’ when you mash them. Pop all the cranberries to release as much juice as possible , cover and cook an additional 30 minutes. Your slow cooker will look like this:

If you do this step, I recommend using a fine mesh strainer to get the small leftover pulp pieces.
