Rub honey-bbq seasoning on a whole chicken and add it the slow cooker to get this healthy dinner salad recipe started.
This all began with Caribeque‘s new honey heat rub, an organic whole chicken and my Hamilton Beach Programmable 6-Quart slow cooker. We’ll start with the honey heat rub. My buddy Kurt over at Caribeque recently released his new BBQ rub line. When I saw that the pork/poultry bottle was called honey heat I knew exactly what I wanted to do: rub it all over a chicken and slow cook the heck out of it. So that’s what I did. I didn’t use measurements, I just shook the rub generously all over the chicken. My bird was about 4 lbs and I probably used 2-3 tablespoons of the rub. I understand that not everyone has this rub by Caribeque. There are tons of other options for store-bought, online (Flavor God has a good one too) or even homemade honey-bbq rubs . If you do a search on Google or Pinterest I’m sure you will be able to find a homemade honey-bbq that suits your dietary needs.
NO LIQUID! Yup, you read that correctly I did not add any liquid to the slow cooker when cooking this and you do not need to either. The chicken will release enough juice, trust me here. I did stuff the inside cavity with a couple of lemon slices. I do this when roasting a chicken in the oven as well; I find that it helps keep the chicken extra moist. Everyone’s slow cooker heats differently hence why there is always a range in the cooking times. My chicken was done after cooking for 2 hours on HIGH.
Now to assemble the salad. On top of my romaine I added cherry tomatoes from my local farmer’s market, 1/2 avocado (that had a few brown spots but still good), a hard-boiled egg and some corn. In place of salad dressing, I added a few squirts of Sweet Baby Ray’s BBQ sauce. Healthy or unhealthy…that’s up to you to decide. Use your favorite bbq sauce or none at all. I find that once all the ingredients are mixed together with a little bit of BBQ sauce no other dressing is needed.
- 3-5 lb whole chicken (organic preferred)
- 2-4 tbsp honey-bbq rub
- ¼ cup bbq sauce
- 2 cups lettuce
- 15 ounces corn, drained & rinsed
- 1 pint cherry tomatoes, sliced
- 1 avocado, sliced
- 2 eggs, hard-boiled
- Season chicken generously with honey-bbq rub.
- Add chicken to slow cooker.
- Cook HIGH 2-4 hours or LOW 4-8.
- When chicken is done cooking, remove from the slow cooker and shred with 2 forks.
- Add lettuce to bottom of large bowl. Assemble salad with ingredients.
- Top with BBQ sauce.
Leftovers. We eat a ton of leftovers in my house. Here’s what I did with the leftover whole chicken. I served it with a simple salad (very simple) and couscous.
