Jerk seasoning is used to create a healthy, homemade sauce for this easy, Caribbean-flavored one-pot slow cooker recipe.
For this recipe I used Caribeque’s Jamaican jerk seasoning. If you’re looking to make your own jerk spice blend, Pinterest is a great source to check out. For the sauce, it’s water and vinegar based. I wanted a light, healthy, paleo sauce that wouldn’t take away from the jerk seasoning. I also wanted to keep this as close as I could to being whole-30-compliant as possible. If you’re following the whole 30 program then simply omit the honey. You can use pretty much any type of potatoes, sweet potatoes or even butternut squash.
This isn’t a necessary step but I recommend it: after the food is done cooking, add a sliced lime and then give everything a good mix. Mix gently so the potatoes don’t fall apart any further than they already are.
- 2-3 lbs chicken breast, cubed
- 1 lb red potatoes, chopped (or sweet potatoes)
- 1 lb green beans
- 3 tbsp Jerk seasoning
- ⅓ cup water
- 2 tbsp white vinegar
- Juice of 2 limes
- 1 tsp honey
- Add chicken, potatoes & green beans to slow cooker.
- In a small bowl mix together sauce ingredients.
- Pour sauce on top food in slow cooker.
- Cook HIGH 2-3 or LOW 4-6.
Your potatoes might turn really soft while cooking so when you mix everything up, the food might mush together. Don’t worry, it should still taste good. If you don’t have jerk seasoning, you can swap it out for another seasoning mix.
