Sauce. In my opinion, the key to a healthy slow cooker meal lies in the sauce. Fall is almost here which means it’s almost officially slow cooker season! It also means long pants and bulky sweaters. One way to beat the bulge this year is sit back and let your slow cooker do it’s magic. By creating your own sauces you gain more control over what you’re actually ingesting. And they’re just as much flavorful as store-bought. In fact I think you’ll find that a homemade sauce tastes better! A good example of what I’m talking about is this lemon-garlic recipe. The lemon-garlic sauce is made up of just water, fresh lemon juice, garlic and a few common herbs. Basic and easy yet packed with flavor. The best part about making your own slow cooker sauce is that you most likely already have all the ingredients you need in your pantry. I kept the title of the recipe vague because this time I used sweet potatoes and sweet peppers but last time I made it with chicken legs, Idaho potatoes and asparagus. The cut of meat, starch potatoes and veggies are interchangeable: breasts, thighs, legs, skin-on, skinless, bone-in, boneless, heck you can even use pork chops. Same with the potatoes sweet potatoes like I used here, red potatoes, fingerlings potatoes, butternut squash, pumpkin…skies the limit. What’s your favorite vegetable? Most likely you can throw it in. Green beans, broccoli, zoodles, bell pepper, onions, asparagus, I’ve even added chopped kale (at the end of cooking).

This lemon-garlic sauce is one of my favorites. We eat a lot of lemons in my house. My husband will eat lemon slices straight up. I’m not that hard-core but I usually keep 3-4 lemons on hand at all times because I use them that frequently. Paired with garlic (lots of garlic in my case) and you can’t go wrong.
- 2-2.5 lbs chicken breasts
- 1 lb sweet potatoes, peeled & chopped
- 1 lb vegetables (I used sweet peppers)
- 1 lemon, sliced
- Juice of 2 lemons (4-6 tbsp)
- 1 lemon, sliced
- ½ cup water
- 4 garlic cloves, minced
- 2 tsp basil
- 2 tsp garlic salt
- 1 tsp salt
- 1 tsp pepper
- ½ tsp red pepper flakes
- Place chicken, sweet potatoes & sweet peppers in the bottom of the slow cooker.
- In a small bowl, mix together sauce ingredients.
- Pour sauce over food in slow cooker.
- Top with sliced lemons.
- Cook HIGH 2-3 or LOW 4-6 hours or until the chicken is done.
The sauce uses all-natural ingredients. I tend to go heavy with the lemon. I use closer to 6 tbsp in my sauce. But that’s just my personal preference. Start out with 4 tbsp, taste it and adjust to your liking.
