Ingredients For Slow Cooker Sausage, Bell Peppers & Onions

  • Smoked Sausage
  • Bell Peppers
  • Onion
  • Garlic
  • Crushed Tomatoes
  • Broth
  • Seasonings: oregano, salt, pepper

How To Make Slow Cooker Sausage, Bell Peppers & Onions 

Slow Cooker

  1. Add all ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6 hours.

Instant Pot

  1. Turn on the Instant Pot to sauté. Once hot, add the oil, onion, and bell pepper. Cook 3-5 minutes or util the veggies are soft. Add the garlic & cook an additional minute. Turn off the pressure cooker. 
  2. Pour in broth and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.
  3. Add all the remaining ingredients. Stir to mix well. 
  4. Close lid and seal valve. Set high pressure and cook 7 minutes. When cooking time is complete, carefully quick-release the pressure.

What Type Of Sausage To Use

This easy crockpot recipe calls for smoked sausage. Smoked sausage is already cooked. When it comes to the type of smoked sausage, that’s up to you. I use a generic smoked sausage but other suggestions include kielbasa or andouille sausage. Note, the type of sausage you use may alter the taste of the dish. FAQs & Tips

  • It may not seem like there is enough liquid in the slow cooker when it starts cooking. This is normal. You do not need to add any additional broth or tomatoes. 
  • Store leftovers in the refrigerator for up to 4 days. 
  • You do not need to use 3 different colored bell peppers. All green bell peppers will work just fine. 
  • How to serve this? I served mine with cauliflower rice but it will all depend on your dietary restrictions. For Whole30, paleo, or low-carb I suggest serving this over zoodles or rice/mashed cauliflower. Other options include stirring in cooked rice or pasta.
  • I used a 6-quart slow cooker or Instant Pot for this recipe.

Ingredients

  • 24 ounces smoked sausage, sliced into 1-inch rounds
  • 3 bell peppers, sliced or chopped
  • 1 large onion, sliced or chopped
  • 2 garlic cloves, minced
  • 15 ounces crushed tomatoes
  • 1/2 cup low-sodium chicken broth (or water)
  • 1 tablespoon dried oregano (or another dried herb)
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 tablespoon oil of your choice (for Instant Pot only)

Instructions
