Soup with flavors of a stir-fry! A homemade broth, cooked udon noodles, shrimp & scallops pair for this flavorful slow cooker noodle soup.
I joined the JSL Food challenge. If you’re not familiar with JSL Food, you probably know their noodles or Twin Dragon products. They make Fortune noodles which were used in this dish (FYI – you can purchase the JSL Foods products at the following stores: Shaws, Star Market, Jewel, Albertsons, Randalls, Stater Bros, Safeway, Lucky’s, Food Maxx, Food 4 Less, Savemart, Bashas’, Raley’s, Bel Air, Nob Hill Foods, WinCo, and Target). Like millions of other people in the world I love noodles. I really love noodles that contain NO MSG. Fortune’s cooked beef udon noodles are just that. Perfect.
This is a kind of last-minute entry; the deadline to post and submit my recipe for the challenge is on 8/31. That’s two days from now. In my defense…I do my best work when down to the wire. I’m just kidding. But I did only sign up to last week which means I got my udon noodles last week as well. Sometimes inspiration for a new recipe comes to me right away. That was not the case here. I had to think long and hard about this one. And this went through a couple of rounds of taste testing. I almost let frustration get the best of me but I’m glad I didn’t because this came out great in my opinion. I know the hot dish submission was supposed to be a stir-fry…this is my version. This slow cooker recipe encompasses the flavors of a stir-fry but in soup form.
There are two categories: hot and cold. This is my submission for the hot category. Of course my hot recipe submission had to be made in the slow cooker. That was the only given. Other than that, I was lost. Then I received my new order of Sizzlefish. As soon as I saw the scallops and shrimp I knew I had my recipe. Udon noodles…seafood…slow cooker…seafood soup! I chose the beef flavor udon noodles so I went with a beef flavored broth. The remaining ingredients are my combination of Asian flavors and spices. For the broth vegetables, I kept it simple and only used green onions and carrots.
While I use my slow cooker year-round, most people only pull theirs out when autumn rolls around. Well it’s almost here. Can you believe fall is around the corner? This is a great fall/winter, healthy soup. It has a nice, flavorful broth yet it’s surprisingly light. I did not use the seasonings packets that come with the noodles. Since this recipe uses its own spices, the seasoning packet is not needed.
- 2 7.25-ounce JSL Fortune's udon noodle, beef flavor
- ½ lb shrimp
- ¼ lb scallops
- 6 cups homemade or low-sodium broth
- 2 garlic cloves, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp fish sauce
- 1 tbsp rice vinegar
- 2 tsp ginger
- 1 tsp sesame oil
- 2 green onions, sliced
- 2 carrots, shredded
- ½ tsp pepper
- Optional garnish: sprouts, red chili flakes, jalapeno
- Add all ingredients EXCEPT noodles, shrimp and scallops to the slow cooker.
- Stir to mix well.
- Cook HIGH 2-3 hours or LOW 4-6.
- Add udon noodles, shrimp& scallops.
- Cook HIGH additional 10-15 minutes or until seafood is done.
Spicy!! I love spicy food. For garnish I added red pepper flakes and jalapeno slices…with seeds.
