This paleo pot includes a whole chicken, sweet potatoes, veggies, seasoning and ghee. It’s all you need for this slow cooker one-pot meal.
I kind of took the easy way out with this recipe. I didn’t create this recipe specifically for the blog so this post will be short. I was just playing but I’m posting it anyway. I had no idea what to cook but I also all these ingredients on-hand. Viola…new 5-ingredient recipe. This one uses the seasoning of your choice. I chose Island Thyme by Caribeque. It’s one of my favorite seasonings to use on poultry because it’s a great mix of Caribbean flavors and fresh herbs.
Yes, it is correct that NO liquid is used. It’s not needed. The juice from the chicken and the citrus will be enough. Citrus? Yes, citrus. You don’t see it in the recipe because I don’t think of it as an actual ingredient per say. I like to stuff my rotisserie with a peeled citrus fruit. It helps the meat stay nice & juicy. It can be a lemon, lime, orange, or even a grapefruit. In this case I used grapefruit. Those are peeled white sweet potatoes you see. You can substitute regular sweet potatoes or even butternut squash. You can use a regular potato too but it won’t be paleo any longer.
The left pic is of the raw food just after I put it in the slow cooker; the right pic is of the finished meal. As you can tell, this pretty much looks the same going in that it does coming out. I like to sprinkle a little bit of the seasoning over the sweet potatoes and carrots as well.
- 3-4 lb whole chicken
- 1 lb sweet potatoes, peeled & diced
- 1 lb carrots, peeled
- 1 tbsp of your favorite seasoning
- 1 tsp ghee
- Rub seasoning all over chicken.
- Add potatoes, carrots, and chicken to slow cooker.
- Add ghee on top.
- Cook HIGH 3-3.5 hours or LOW 6-7.
