I didn’t plan on being offline for a week. The resort I stayed at in Ambergris Caye promised free WiFi but that ended up not being the case. Which of course was a blessing in disguise. It was good to ‘turn it off’ for a week. If you haven’t been to Belize, I cannot recommend it enough. Belize is a beautiful country. Ambergris Caye is a beautiful island. The people are hands down some of the nicest people I have ever encountered. And the food. AMAZING. I have always liked Caribbean or “island food” as I like to call it but I now love it. The pic below is of the seafood ceviche I got while dining at Blue Water Grill. Shrimp, conch, and octopus tossed with red onion, green olives, tomatoes, cilantro, habanero and fresh lime juice. It was as good as it looks.
This jerk chicken, beans & rice and coleslaw was a stable in our diet. We had this served to us 3 days in a row for lunch by the different tour companies during our excursions. The chicken was different from the normal Jamaican jerk chicken I’m used to. Just as delicious but different. Not nearly as spicy.
The next month or so I will be trying to recreate some of the meals I had in Belize. It was such an unBELIZEable vacation I definitely want to share as much as I can with you all. I’ll finish this post with my favorite picture. I took this during a diving/snorkeling excursion to The Great Blue Hole. On our way back we stopped at Halfmoon Caye.
