Vegan Banana-Oat Bread

I’m really trying to be more creative with my breakfast foods. Usually I  make myself a smoothie or an egg or two with avocado toast. I kind of forgot about this recipe until a couple of days ago when I was going through my Instagram account. I posted a non-vegan, muffin version of this last year. This time, I wanted to try making this with unsweetened applesauce (vegan) so see if it would taste the same. The first round, it was a little too sweet. Even though I used unsweetened applesauce. Next round, I lowered the pure maple syrup amount by 1 tbsp and  it came out just right.  So rule of thumb, I would say if you’re using an egg, add 3 tbsp pure maple syrup. If you’re using applesauce, only add 2 tbsp.

Whenever I make this, it’s always different. Different fruit, different nuts, etc. Fruit, whether you use fresh or dried are a great addition to this recipe. Don’t get me wrong, even if you just use bananas, that’s okay too. For this batch, I used the leftover pomegranate seeds I still had from my pork tenderloin. I added them into the mix prior to baking and I made a quick  pomegranate chia seed jam to go on top. Chia seed jam is SO easy to make. Here is my recipe. You can use pretty much any berry (strawberry, blueberry, blackberry).

 

Chia Seed Jam

1 cup fresh fruit (chopped)

2 tbsp pure maple syrup

1 tbsp chia seeds

Add chopped fruit, chia seeds and pure maple syrup (if using) into food processor. Blend on medium to high-speed until preferred jam consistency is obtained. Add water 1 tsp at a time as needed. Transfer mixture into a mason jar & place in the fridge for an hour to set.

Ingredients

Units Scale
  • 1 cup rolled oats
  • 2 very ripe bananas
  • 1/4 cup unsweetened applesauce OR 1 egg if not vegan
  • 3 tbsp pure maple syrup or honey if not vegan
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp baking powder
  • Optional: raisins, dried fruit, nuts, etc.

Instructions

  1. Preheat oven to 375.
  2. Mash bananas in medium size bowl with fork.
  3. Add remaining ingredients and mix well.
  4. Scoop evenly into greased loaf or muffin pan.
  5. Bake for 20 min. You’ll know it’s done when you insert a tooth pick and it comes out clean.
