Air Fryer Caprese Stuffed Chicken

This low-carb air fryer caprese stuffed chicken recipe is not only really flavorful, it comes together very easily. The best part is it cooks in under 30 minutes! Baking instructions are included in the blog post as well.

 

Ingredients For Air Fryer Caprese Stuffed Chicken

  • Chicken Breasts
  • Fresh Mozzarella
  • Fresh Basil
  • Tomatoes
  • Oil
  • Seasonings: dried basil, salt, pepper

How To Make Caprese Stuffed Chicken In The Air Fryer

Prepare the caprese stuffed chicken:

  1. Slice a wide pocket into the thick side of each chicken breast, cutting almost to the other side but not all the way through. Open the butterflied chicken.  Drizzle with the chicken evenly with oil and season with salt & pepper.
  2. On the right half of each chicken breast, layer the mozzarella slices, tomato slices, and the fresh basil.
  3. Carefully fold the left side of  the butterflied chicken over the right and seal it with 2-4 toothpicks.
  4. Season the top of each breast with Italian seasoning and a pinch of salt & pepper.
  5. Spray cooking spray on top of each seasoned chicken breast

Air Fryer

  1. Preheat the air fryer to 350 degrees F.
  2. Line the basket with a air fryer liner or foil. Add the prepared stuffed chicken breasts.
  3. Cook 350 degrees 25-30 minutes or until the internal temperature of the chicken reaches 165 degrees F.
  4. Drizzle with balsamic vinegar before serving (if using).

Oven

  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with parchment paper or foil. Add the prepared stuffed chicken breasts.
  3. Cook 25-30 minutes or until the internal temperature of the chicken reaches 165 degrees F.
  4. Drizzle with balsamic vinegar before serving (if using).

What Is Caprese Exactly?

This caprese stuffed chicken is based on a caprese salad.  Caprese salad is a simple Italian recipe made from tomatoes, mozzarella, and basil. It’s one of my favorite salads. I make it fairly frequently because it’s easy to throw together yet really good.  Basically all I did here was take a chicken breast and stuff it toamtoes, mozzarella, and basil.’

What Is An Air Fryer?

The name air fryer is a little bit confusing, because when you cook food in your air fryer you aren’t actually frying it. An air fryer cooks your food by circulating hot air around the food at a very high-speed, cooking the food and producing a crispy ‘fried’ layer. This is called convection so your air fryer is actually a small countertop convection oven. An air fryer can help you cook your food faster while still getting a nice baked or fried texture on the outside, all with a very small amount of oil. Air fryers come in a variety of different sizes and styles. What you see here in the pics is a 5.8-quart air fryer.

Can you tailor this recipe to your liking?

Use the measurements for the mozzarella, basil, and tomatoes as a guide. I used 2 slices of tomatoes, 2 slices of mozzarella, and 3 basil leaves on each piece of chicken. You might want to use more or less.

Do you need toothpicks?

You might not find that you need to pin your chicken closed with toothpicks but I find they come in handy.

Will the cooking time vary?

Maybe.  You may need to adjust the cooking time accordingly. Every air fryer is different and the size of your chicken breast is probably different than mine. You might need longer or less than for the internal temperature of your chicken to reach 165 degrees F.

  • 2 large boneless, skinless chicken breasts (approximately 1 pound)
  • 1 roma tomato, sliced (I used 4 slices)
  • 1/4 pound fresh mozzarella, sliced approximately 1/4-inch thick (I used 4 slices)
  • 6 fresh basil leaves (more or less)
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • Pinch of salt & pepper

Instructions
