PORK  STUFFED PEPPERS

Stuffed peppers are one of the easiest & healthiest meals you can make in your slow cooker. There are tons of different variations to choose from and you don’t even need to brown the pork first. 

 KEY INGREDIENTS

Bell Peppers Farmer John Lean Pork Quinoa Crushed Tomatoes Garlic Cloves Grated Parmesan Oregano Basil Salt And Pepper Mozzarella Cheese

In a large bowl, mix together pork, quinoa, parmesan cheese, crushed tomatoes, garlic, oregano, basil, salt and pepper.

Spoon the filling into each bell pepper cavity. Add bell peppers into the slow cooker.

Cover and cook on LOW for 5-6 hours or HIGH for 2-3 or until the pork is cooked through.

Uncover and top with 1/2 cup shredded mozzarella cheese. Cover and cook on low heat for an additional 10-15 minutes, or until the cheese has melted.

SERVE

Serve with a side salad. These were an absolute hit in my household.
