Ingredients For Slow Cooker Meatball Tortellini Soup

  • Frozen Meatballs
  • Frozen or Fresh Tortellini
  • Frozen or Fresh Kale 
  • Broth (beef or chicken)
  • Diced or Crushed Tomatoes
  • Water
  • Onion
  • Garlic
  • Carrot
  • Seasonings: Italian seasoning, salt, pepper

How To Make Slow Cooker Meatball Tortellini Soup

Slow Cooker

  1. Add all the remaining ingredients except the kale and tortellini. Stir to mix well.
  2. Cook HIGH 3-4 hours or LOW 6-8.
  3. Stir in the tortellini and kale. Cover and cook an additional 5 to 10 minutes. 

Instant Pot

  1. Add all the except the tortellini  and kale to the Instant Pot. 
  2. Close lid and seal valve. Set high pressure and cook for 25 minutes. When cooking time is complete, quick release the pressure.
  3. Open the lid and stir in the tortellini and kale. Turn off the Instant Pot. Place the cover back on. Let the soup sit for 5 to 10 minutes.

What type of meatballs meat should you use?

This soup calls for frozen meatballs. If you want to make your own fresh meatballs, you absolutely can. Add them uncooked to the slow cooker as if they were frozen. You do not need to make any adjustments to the cooking time. 

What type of tortellini should you use?

Use your favorite kind! This can be fresh or frozen. I use generic brand, frozen cheese tortellini. Whether your tortellini has meat is up to you. 

Should you use beef or chicken broth?

It depends. What you see in the picture is beef meatballs and beef broth. Whether you use beef or chicken broth is up to you. Both work well in this recipe. 

What if you do not like kale?

Substitute another leafy green like spinach or simply omit it.

How do you store leftovers?

Store leftover meatball tortellini soup in the refrigerator for up to 4 days. 

What size slow cooker should you use?

I used a 6-quart slow cooker or Instant Pot.

  • 1 cup fresh or frozen kale
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef or chicken broth
  • 1 large carrot, peeld & diced
  • 2 celery ribs, sliced
  • 15 ounces diced or crushed tomatoes
  • 2 cups water (or more broth)
  • 1 tablespoon dried Parsley
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon black pepper

Instructions

Slow Cooker
