How To Make Crockpot Leftover Holiday Soup
- Add all the ingredients to the slow cooker. Stir to mix well.
- Cook HIGH 2-3 hours or LOW 4-6.
- Turn on the pressure cooker and select sauté. Once hot, add the add oil to the pot. Add the carrots, onion, and celery. Cook 3 to 5 minutes or until veggies begin to soften.
- Add the broth & deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.
- Add all the remaining ingredients. Stir to mix well.
- Select manual setting, high pressure for 20 minutes. When cooking time is done, quick-release the pressure.

What if you don’t have enough of each ingredient?
No problem. Use the leftovers that you have. For example, you may find that you do not have a full pound of leftover turkey. 1/2 to 3/4 will also work. In it’s place you can heavy up on other leftovers.
Can you use ham instead of turkey?
Of course! This also works with rotisserie chicken.

- 1 pound leftover turkey
- 1 cup leftover stuffing or dressing
- 1 cup leftover mashed potatoes
- 1 cup leftover greens or green beans
- 4 cups chicken broth
- 1/3 cup onion, diced
- 1 large carrots, peeled & diced
- 2 celery ribs, sliced
- 2 garlic cloves, minced
- 1 1/1 teaspoons dried thyme
- 1 teaspoon salt (or more)

- 1 tablespoon oil (for Instant Pot only)
