What Is An Air Fryer?
An air fryer is an appliance that circulates hot air around food at high-speed, cooking the food and producing a crispy ‘fried’ layer. Air fryers come in various sizes. I have 2 air fryers. Two different brands, two different capacities. One is a 5-quart, the other is a 5.8-quart. What size air fryer you should get depends on your needs. I’m a household of two so most days I usually cook 2 pounds of food and under which can go in my 5-quart without having to do more than 1 batch. For this recipe since I’m using a little over 2 pounds of meat, I used my 5.8 quart.
What Is Piri Piri?
Piri piri, also known as peri peri is African bird’s eye chili. The variations in spelling come from the various pronunciations of the word in parts of Africa; ‘piri-piri’ is the spelling in Portuguese. So is piri piri Portuguese or African? Both. It was originally produced in Mozambique by Portuguese explorers. Piri piri sauce is popular in both Portuguese & African cuisines. For this piri piri marinade, I took the sauce from my Slow Cooker Piri Piri Chicken recipe and adjusted the measurements to make it marinade friendly.
What Cut Of Chicken To Use?
You can use 2 to 3 pounds of your favorite cut of chicken. To switch things up a bit, I used 2.5 pounds of chicken tenders. Other options include chicken legs, thighs, wings, etc. If you cook dark meat, might need to adjust the cook time. Like slow cookers, every air fryer is different. The cook time that works for me might not work for you. Cook your chicken until the internal temperature reaches 165 degrees.
OTHER COOKING METHODS
Don’t have an air fryer yet? That’s okay. While I do recommend getting one, you can also grill or bake the chicken. Here are instructions on what to do once the chicken has marinated. I used chicken tenders so the instructions are for chicken tenders.
To GRILL: Set grill to medium-high heat. Add chicken tenders to the grill over direct heat. Discard marinade. Grill chicken about 4-5 minutes on each side or until chicken’s internal temperature has reached 165 degrees.
To BAKE: Preheat oven to 425F. Place chicken on a large baking sheet in a single layer. Bake 15-20 minutes or until chicken’s internal temperature has reached 165 degrees.

- 2–3 pounds chicken
Piri Piri Marinade:
- 1/2 cup oil
- 1/4 cup lemon juice
- 2 tbsp white vinegar
- 1 garlic cloves, minced
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cayenne
- 1 teaspoon oregano
- 1/2 teaspoon ground ginger
- 1/2 teaspoon pepper
- In a large bowl, mix together marinade ingredients. Add chicken and toss until all the pieces are evenly coated.
- Cover & refrigerate minimum 30 minutes.
- Discard marinade and add chicken tenders to the air fryer.
- Turn air fryer to 380 degrees and cook 15 minutes. Flip the chicken and cook an additional 10-15 minutes.
