Avocado Slaw (Low-Carb, Paleo, Vegan, Whole30)

Ingredients

  • 12 ounces broccoli slaw
  • 12 ounces coleslaw

Avocado sauce:

  • 2 ripe avocados, peeled & pits removed
  • 1/2 cup coconut milk
  • 1/4 cup white vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Add avocado flesh, coconut milk, vinegar, Dijon, garlic, salt, and pepper to a blender. Pulse until smooth.
  2. In a large bowl add broccoli slaw, coleslaw, and avocado mixture. Toss together until everything is well blended.
