Ingredients

  • 2 pounds fresh green beans, trimmed & snapped into pieces
  • 1 1/3 cups French fried onions

Cauliflower Sauce

  • 1 large head cauliflower, trimmed, chopped, and cooked (approximately 24 ounces)
  • 1 garlic clove, minced
  • 1/2 cup almond milk or milk of your choice
  • 1 tablespoon ghee, butter, or vegan butter
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon pepper
  • salt & pepper to taste

Instructions

  1. Spray slow cooker lightly with cooking spray. Add green beans to the slow cooker.
  2. Add  the cauliflower sauce ingredients to a food processor or blender. Pulse until it smooth. If needed, add additional milk until the sauce reaches your desired consistency. Season with salt & pepper to taste.
  3. Pour sauce on top of fresh green beans. Add 2/3 of the French fried onions. Stir to mix well.
  4. Cover and cook HIGH 2-3 hours or LOW 4-6.
  5. Stir. Top with remaining French fried onions before serving.
