This crockpot leftover holiday soup takes leftovers from your recent holiday dinner and turns them into a comforting soup. Leftover turkey, stuffing, mashed potatoes, and collard greens slow cook together in this easy and hearty slow cooker soup recipe. The aroma of Thanksgiving, Christmas, or Easter will fill your kitchen! Instructions to make this leftover turkey soup in the Instant Pot are also included.

Ingredients

  • 1 pound leftover turkey
  • 1 cup leftover stuffing or dressing
  • 1 cup leftover mashed potatoes
  • 1 cup leftover greens or green beans
  • 4 cups chicken broth
  • 1/3 cup onion, diced
  • 1 large carrots, peeled & diced
  • 2 celery ribs, sliced
  • 2 garlic cloves, minced
  • 1 1/1 teaspoons dried thyme
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon pepper
  • 1 tablespoon oil (for Instant Pot only)

Instructions

Slow Cooker

  1. Add all the ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Once hot, add the add oil to the pot. Add the carrots, onion, and celery. Cook 3 to 5 minutes or until veggies begin to soften.
  2. Add the broth & deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.
  3. Add all the remaining ingredients. Stir to mix well.
  4. Select manual setting, high pressure for 20 minutes. When cooking time is done, quick-release the pressure.
