Garlic Butter Steak Bites + VIDEO

Instant Pot garlic butter steak bites are a full of flavor and easy to make. You can also make this low-carb, paleo & whole30 garlicky steak recipe in your slow cooker.

Tender cuts of beef and a garlicky butter sauce…it seriously doesn’t get any better. This is another trifecta recipe: low-carb, paleo, and whole30. Tailor these steak bites to be as healthy as you want them to be. For example if you’re keto and what to up your fat intake, use 2 tablespoons of ghee/butter instead of 1.

Instant Pot vs Slow Cooker Version

This slow cooker (Crock-Pot) or pressure cooker (Instant Pot) version of steak bites is different than stove-top recipes. The main difference is the amount of liquid. In both instances, there will be more sauce than a stove-top version. That’s because in order for the Instant Pot to pressurize it needs a minimum of one cup of liquid & with a slow cooker there’s nowhere for liquid to evaporate. The end result is over a cup of a delicious garlic butter sauce. I highly suggest you pour the leftover sauce on the steak bites before serving.

What Type Of Beef To Use

I like to use sirloin. Other suggestions are stew meat, flank steak, top round roast, chuck roast, or even brisket.  If you’re using a tougher cut like brisket, cut the meat into smaller 1/2-inch size pieces to help it cook-to-tender faster.

Homemade Steak Seasoning

This recipe calls for your favorite steak seasoning.  If you don’t have a favorite or preferred steak seasoning, make your own. Below is my homemade steak blend if you don’t have one. Mine includes salt so you don’t need to add any additional salt to this recipe, there is more than enough between the steak seasoning and the broth. If the steak seasoning you use does not include salt, add a teaspoon or more to the recipe.

Thickening The Sauce

While I rarely take the time to do so, you can thicken the garlic butter sauce before serving. It can be done directly in the slow cooker or Instant Pot. When cook time has completed, pour your slurry into the pot and stir. It should start to thicken within a few  minutes. I almost always use a slurry of arrowroot starch and water as my thickener. I use a a 1:1 water/starch ratio, usually 2 tablespoons arrowroot starch mixed with 2 tablespoons of water.  Feel free to use your preferred thickening agent & ratio.

I like to serve this over mashed or riced cauliflower. I used a 6-quart slow cooker /or Instant Pot for this recipe.

Garlic Butter Steak Bites

Ingredients

Units Scale
  • 2 pounds beef sirloin, cut into 2-inch cubes
  • 2 tablespoons steak seasoning
  • 12 tablespoons ghee or butter
  • 2 garlic cloves, minced (or more)
  • 1/4 cup onion, diced
  • 4 ounces mushrooms, sliced (optional)
  • 1/2 cup low-sodium beef broth for slow cooker, 1 cup for Instant Pot
  • Salt & pepper

Instructions

Season the beef with salt & pepper. 

Slow Cooker

  1. Add all the ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6.

Instant Pot

  1. Set Instant Pot to the sauté setting. When hot, add ghee/butter & the beef. Cook a few minutes until the beef starts to brown. Stir in onion and mushrooms (if using). Cook a 2-3 minutes, or until mushrooms are soft. Add garlic and cook an additional minute.
  2. Turn off the pressure cooker. Add the steak seasoning and 1 cup of broth. Stir to mix well. Using a wooden spoon scrape  the bottom of the Instant Pot to remove any bits that stuck to it, make sure you scrape it well to avoid burning during cooking.
  3. Close lid and seal valve. Set high pressure and cook for 9 minutes. When cook time is up, quick release the pressure.

This is one of our weekly meals. So very delicious and the meat is so tender, but the only thing I changed was the meat. I used beef chuck roast and cubed it.
