Paleo Jalapeño Cornbread

Ingredients

  • 1/2 C almond flour
  • 1/4 C coconut flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3 eggs
  • 2 tbsp ghee, melted
  • 2 tbsp avocado oil
  • 2 tbsp honey
  • 1/2 C almond milk
  • 1 jalapeño, diced (saving a few slices for garnish)

Instructions

  1. Preheat the oven to 325.
  2. Oil skillet well.
  3. Blend all the dry ingredients in a bowl.
  4. Whisk wet ingredients to the dry ingredients until well blended.
  5. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center of the bread comes out clean.
  6. Top with jalapeño slices.
