This quick whole 30 compliant and paleo dish is the perfect healthy appetizer to serve for game day or for any gathering.
I’m at the end of my husband’s triathlon season but the beginning of football season! This appetizer was made with both in mind. I picked up some more sausage from Pasturebird. This time I went with the chicken-apple sausage. Dare I say I enjoyed it more than their chicken-basil?!? Right away I knew I wanted to fry up some apples to mix in with the sausage and I wanted to keep it simple. Pasturebird sausages are so flavorful that I find not a lot of other ingredients need to be mixed in with them. In this case just apples, that’s it no seasoning. FYI approximately 20% of the sausage & apple mixture went straight into my mouth.
Keep it simple. Why add more if it’s not needed? I found a couple hard-boiled eggs in my frig so I sliced those then added a dollop of Primal Kitchen Paleo Approved Avocado Oil Mayo which tastes way better than regular mayo in my opinion. If you’ve been following this blog then you know I hate mayo in general so that’s a huge statement coming from me. Note that this recipe uses small sweet peppers which is very different from regular bell peppers but you can use those too.
- 1 lb sausage
- 1 apple, diced
- 1 lb sweet peppers
- 1 tsp ghee or coconut oil
- In a medium size skillet, add ghee and melt. Add apples and cook 2-3 minutes or until soft. Remove apples from skillet and add UNCASED sausage. Cook 5-7 minutes or until sausage is done and no longer pink.
- Add apples back into skillet and heat through.
- Slice each sweet pepper in half and stuff with sausage/apple mixture.
- Serve immediately.
I took the leftovers and served it for breakfast with some eggs.
