FitMenCook’s instagram page was one of the first pages I started following when I joined Instagram. He was cooking the way that I was just discovering was possible – food that tastes good AND is healthy. At that time, never in a million years would I have thought that one day I would have a food page of my own let alone a food blog! Talk about inspiration. So when I saw that FitMenCook was coming out with his own seasoning line, I didn’t hesitate to donate to the kickstarter fund. I knew he wouldn’t disappoint me and he did not. I LOVE the seasonings. I seriously opened and tasted each one. I’m beyond excited.
If you don’t have cod you can substitute another white fish. I actually cooked a piece of Sizzlefish’s catfish (seasoned with the same ingredients) right along with this cod in the grill pan. The cod is pretty, isn’t it?
I intended on grilling this on my actual grill outside but….I got lazy so I pulled out my Calphalon grill-pan instead. A little bit of ghee in the pan, that’s all you need.
I’m not being paid in any way to say this – I cannot recommend The Spice Cave seasonings enough. They are seriously fantastic. And I’m saying this as someone who tries to make as many of their own spice blends as they can. The Spice Cave seasonings are great and worth the money. - 1/2 lb cod
- 2 tsp ghee
- 1/2 lb boy choy, steamed
- 1 cup brown rice, cooked
- 1/4 cup cherry tomatoes, sliced
- 1 tbsp The Spice Cave’s SEA seasoning
- Add ghee to grill pan over medium heat.
- Season cod generously with SEA seasoning.
- Add to grill pan and cook a few minutes each side (or until done to your liking)
- Serve on top of brown rice with bok choy and cherry tomatoes
For my sides I went with leftover brown rice, steamed bok choy and cherry tomatoes.
