Slab bacon jam on and press some bacon bits into your biscuits then sit back. This slow cooker breakfast recipe is super easy, fun, and delicious.
You knew you could make biscuits in the slow cooker, right? As I’ve said a hundred times here on this blog, you can pretty much make anything in the slow cooker. Bacon jam…I should probably have a slow cooker bacon jam recipe by now. Should being the operative word. I should also probably make my own biscuits but I didn’t do that either. No apologies. And yes, I know this is not whole 30 or paleo. I warned you that not every recipe would be whole 30 even though I’m eating that way this month. So, grab your favorite can of store bought biscuits. I used the generic brand from Vons. Now a jar of bacon jam or make your own. I used bacon jam spread from The Bacon Jams!! SO good.
Add a line of parchment paper to the bottom to prevent sticking. You might have a hard time getting all the biscuits to fit. Out of a can of 8, my 6-quart only fit 7 biscuits. The key to this recipe is to include real bacon as well. I cooked up some of 5280Meat’s smoked pork bacon. After crumbling it, I press equal amounts into the top of each biscuit. If you want to get crazy, go ahead and open the biscuit and stuff some bacon inside as well.
- Line slow cooker with parchment paper.
- Press an even amount of bacon on top of each biscuit.
- Spread bacon jam evenly on top of each biscuits.
- Place biscuits in the bottom of the slow cooker.
- Cook HIGH 1-2 hours or until bottoms and are crisp.
This is one of those recipes that you’ll have to watch the first time you make it. My biscuits were done in a little under an hour using one slow cooker and hour and a half using another. The end result is crispy biscuit bottoms and warm bacon jam tops.
