Chicken, potatoes, the usual buffalo wings accompaniments and buffalo wing sauce (with added ingredients) make up this flavorful one-pot slow cooker meal.
To keep this simple and in the spirit of buffalo chicken, I used celery and carrots for the vegetables and baby potatoes for the starch. If you follow a paleo lifestyle then you can substitute the potatoes for sweet potatoes but the buffalo sauce isn’t paleo.
I’m once again using a bottle of sauce from my Cookies gift set box. If you don’t have Cookies then grab your favorite bottle of buffalo wing sauce. Please note this calls for buffalo wing sauce, not hot sauce. Since this is a one-pot meal with starch and vegetables I chose to dilute the wing sauce rather than just pour it in. It would be too salty if I used only the sauce. I diluted the sauce a bit with almond milk because I wanted to maintain a sort of milky-ranch flavor in the pot.
I intended to add more seasonings to the sauce but Cookies Buffalo Wings Sauce is so flavorful it didn’t need it. If you’re using a different brand then expect a slightly different taste. I highly suggest you taste your sauce before pouring it into the slow cooker. Too salty? Try add a splash of almond milk or even water. Speaking of water, if you don’t want to or don’t have almond milk then dilute your sauce with water instead.
- 2 lbs chicken
- 1 lb baby potatoes, cut in half
- 3 celery stalks, chopped
- 2 carrots, chopped
- 1 cup Cookies Wings N Things Buffalo Wing Sauce
- ½ cup almond milk
- 1½ tsp parsley
- 1 tsp garlic powder
- 1 tsp dried onion flakes
- Add chicken, potatoes, celery and carrots to the slow cooker.
- In a small bowl, mix together sauce ingredients.
- Pour sauce into the slow cooker on top of dry ingredients.
- Cook HIGH 2-3 hours or LOW 4-6.
