Slow Cooker Turkey, Potatoes & Peppers (Paleo, Whole30)

Leftover turkey (or chicken) along with peppers, potatoes, and a simple homemade Cajun seasoning are all you need for this healthy one-pot slow cooker recipe.

Turkey is one of my favorite proteins. I always ask myself why I don’t eat turkey more often and I can’t think of an answer. I love turkey! This recipe uses leftover, pre-cooked turkey breast. If you don’t have or like turkey, use chicken breast. My turkey was pre-seasoned with Cajun seasonings but if yours is not, that’s okay. You can use a regular turkey breast and add the Cajun seasoning. The rule of thumb that I follow is 1 tbsp of Cajun seasoning per pound of meat. Having said that, I’m still leaving the instructions as a range of 1-2 tablespoons. I know it’s a wide range but everyone’s taste buds are different. Below is my homemade Cajun seasoning. I keep a batch of this in my pantry at all time. I’m not going to preach but homemade seasonings are always healthier and usually cheaper than store-bought:

When chopping the veggies and potatoes, try to chop them in even pieces so they cook consistently. Don’t worry about the turkey overcooking. If anything it will be so tender it will fall apart. You can use any type of potato or sweet potato. I used white sweet potatoes.

Add 3 more cups of broth and turn this into a soup!

Ingredients

  • 1.52 lb cooked turkey or chicken breast, chopped
  • 1 lb potatoes or sweet potatoes, chopped
  • 2 bell peppers, chopped
  • 3 celery stalks, chopped
  • 15 ounces diced tomatoes
  • 1 cup low-sodium chicken broth
  • 12 tbsp Cajun seasoning
  • 2 tsp oregano
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/4 tsp pepper

Instructions

  1. Add all ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 or LOW 4-6.

With summer coming I use my slow cooker even more. This looks like a really tasty recipe. I love that you can use sweet potatoes in it too they are a favorite in my house.
