- 1.5 – 2 lb cooked turkey or chicken breast, chopped
- 1 lb potatoes or sweet potatoes, chopped
- 2 bell peppers, chopped
- 3 celery stalks, chopped
- 15 ounces diced tomatoes
- 1 cup low-sodium chicken broth
- 1–2 tbsp Cajun seasoning
- 2 tsp oregano
- 1 tsp salt
- 1/2 tsp cumin
- 1/4 tsp pepper
- Add all ingredients to the slow cooker. Stir to mix well.
- Cook HIGH 2-3 or LOW 4-6.
