Slow cooker candied sweet potatoes is a healthy and delicious side dish that’s perfect for your next holiday dinner. This vegan and paleo friendly sweet potato recipe is easy to make and will impress any crowd. Sweet potatoes, maple syrup, and cinnamon slow cook together…this is a crockpot recipe that will have your kitchen smelling amazing as it cooks! Instructions to make this sweet potato casserole in the Instant Pot are also included.

Ingredients

  • 3 pounds sweet potatoes, peeled & sliced into 1/2-inch rounds or chopped into large chunks
  • 3/4 cup maple syrup
  • 2 teaspoons arrowroot starch
  • 1 tablespoon cinnamon
  • 1/3 cup chopped nuts
  • 1/4 cup orange juice
  • 1 cup water (for the Instant Pot version only)

Instructions

Slow Cooker

  1. Add the sweet potatoes to the slow cooker. Sprinkle the sweet potatoes with the starch & cinnamon.
  2. Pour the maple syrup and orange juice on top. Mix gently until the sweet potatoes are coated.
  3. Cook HIGH 2-3 hours or LOW 4-6.
  4. Stir the sweet potatoes. Top with the chopped nuts, if using.

Instant Pot

  1. Add 1 cup of water and the sweet potatoes to the pressure cooker.
  2. Close lid and seal valve. Cook high pressure for 3 minutes. When cooking time is complete, quick release the pressure.
  3. Remove the potatoes & drain the liquid. Turn the pressure cooker on to sauté – low. Stir in the starch, cinnamon, orange juice, and maple syrup. Add potatoes and toss until evenly coated.
  4. Top with chopped nuts before serving, if using.
