What better way to celebrate National Jerky Day than with some jerky meatloaf?!? Most people wouldn’t think to put jerky in their meatloaf but they also wouldn’t think to make meatloaf in the slow cooker either. During my husband’s triathlon season, we eat a lot of jerky in my household. By the pounds, I’m not kidding you. I even bought a dehydrator with the hopes of making my own. That venture was an instant and epic…failure! Maybe one day I’ll revisit it but these days I’m back to buying my jerky. Since my husband likes to eat jerky during training season, it’s important that I buy jerky that’s as clean as possible.
KRAVE jerky is everything we were looking for. It’s entirely gluten-free and devoid of nitrites, MSG, and corn syrup except those which naturally occur in sea salt and celery seeds.
If you’re worried about the meatloaf coming out dry don’t be. One of the benefits of slow cooker meatloaf is the finished product is usually super moist.
Since I used KRAVE’S Honey Habanero Chicken Jerky, I added a bit of honey and red pepper flakes to my meatloaf. I didn’t have the guts to add an actual habanero.Print
Slow Cooker Chicken Jerky Meatloaf
- Prep Time: 10 mins
- Cook Time: 3 hours
- Total Time: 3 hours 10 mins
- Yield: 4
- 1 lb ground meat
- 2.7 ounces KRAVE’S Honey Habanero Chicken Jerky
- 1 small egg
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 ounces diced tomatoes
- 1/4 cup almond flour
- 2 tbsp Italian seasoning
- 1 tsp salt
- 1 tsp honey
- 1/2 tsp pepper
- 1/4 tsp red pepper flakes
- Optional Ketchup:
- 1 8 oz can tomato sauce
- 1/2 tsp vinegar
- 1 tsp Italian seasoning
- Add jerky to a food processor and pulse until finely ground.
- In a large bowl, mix the ground jerky all the remaining ingredients.
- Line the bottom of the slow cooker with aluminum foil. Spray the foil lightly with cooking spray.
- Shape the meat mixture into a loaf and place in slow cooker on top of the foil.
- Cook on HIGH 2-3 hours or LOW 4-6.
Optional – 10 minutes before cook time is completed, mix together ketchup ingredients and spread on top of meatloaf. Cover & cook the remaining 10 minutes.
The aluminum foil allows you to easily lift the meatloaf out of the slow cooker. While the ketchup is optional, I recommend you use it. If you prefer red meat then substitute ground beef for the ground chicken and ground KRAVE’S Pink Peppercorn Beef Jerky.
