What Is Prosciutto Wrapped Chicken
I refer to this prosciutto wrapped chicken as my easy slow cooker version of chicken saltimbocca. Saltimbocca is Italian for “jumps in mouth” and refers to dishes in which various meats are wrapped in ham. I simplified it here and I think it’s pretty darn good.
This recipe is inspired by the chicken saltimbocca recipe from my second cookbook, The Healthy Low-Carb Slow Cooker Cookbook. You will find the original cookbook recipe below.
The Healthy Low-Carb Slow Cooker Cookbook includes:
- Low and slow cooking 101 that offers guidance for making a low-carb diet easy, with recommendations for pantry staples and a sample meal plan.
- 100 low-carb recipes for delicious and satisfying meals that contain no more than 20 grams of carbs per serving.
- Quick prep with a max prep time of 15 minutes for no-fuss everyday meals.
FAQs & Tips
- Applegate prosciutto is Whole30 compatible.
- Substitute bacon for the prosciutto. Wrap 1 to 2 slices of uncooked bacon around each chicken breast and secure it like you would the prosciutto. Cooking time will remain the same.
- Notice there’s no salt other than on the chicken? I find that between the prosciutto and capers, salt isn’t needed. But that’s just me. If you want to add salt to this, go ahead it won’t hurt.
- Substitute chicken thighs or even pork chops.
- You may need a few toothpicks to secure the prosciutto around the chicken but don’t forget to discard them before serving.
- I used a large 6-quart slow cooker.
