A light, homemade citrus sauce is added to the slow cooker along with chicken, potatoes and your favorite vegetables for this easy one-pot meal.
To me, this is a great summertime slow cooker recipe. The citrus sauce is nice & light and I encourage you to utilize your favorite summer vegetables. I used a mixture of zucchini, squash, carrots, bell peppers and red onions. You really can use the vegetables that you prefer. This is great recipe to shop for at your local Farmer’s Market.
I used boneless, skinless chicken breasts but feel free to throw in any cut of chicken whether it be boneless or bone-in, skinless or skin-on, thighs, legs, etc. You can even use a whole chicken. If you choose to use dark meat then adjust the cook time by adding an additional hour or so. I’m on a red and yellow potato kick so that’s what you see here. For paleo you can substitute sweet potatoes or even butternut squash.
The sauce will fall to the bottom after you pour it on. Don’t worry, there’s plenty of sauce for all the ingredients. I sometimes dice the chicken and stir everything together before I set it to cook. It comes out like a chicken citrus stew.Print
Slow Cooker Citrus Chicken, Potatoes & Veggies

- 2 lb chicken breasts
- 1 lb potatoes, diced
- 2 lb vegetables, chopped
- 1 tsp lime zest
- 1 tsp orange zest
- 1 tsp salt
- 2 garlic cloves, chopped
- 1 tbsp evoo
- 2 tbsp coconut aminos or low-sodium soy sauce
- 2 tbsp lemon juice
- 1/4 cup lime juice
- 1/4 cup orange juice
- Add vegetables, potatoes, and chicken to the slow cooker.
- In a small bowl, mix together sauce ingredients.
- Pour sauce over chicken, potatoes & vegetables.
- Cook HIGH 2-4 hours or LOW 4-6.
