  • 3 13.5-ounce cans light coconut milk
  • 1/2 cup water
  • 1 bell pepper, diced
  • 1/2 small red onion, diced
  • 1 tbsp curry powder
  • 1 tsp fresh ginger, chopped finely
  • 1 1/2 tsp salt
  • 1/2 tsp coriander
