- 8 ounces salmon
- 3 13.5-ounce cans light coconut milk
- 1/2 cup water
- 1 bell pepper, diced
- 1/2 small red onion, diced
- 1 tbsp curry powder
- 1 tsp fresh ginger, chopped finely
- 1 1/2 tsp salt
- 1/2 tsp coriander
- 1/4 tsp pepper
- Add all the ingredients to the slow cooker.
- Stir gently to mix well.
- Cook HIGH 2 hours or LOW
