How To Cook Creamy Pork Chops In The Slow Cooker

Making creamy pork chops is very easy…especially when you use the slow cooker.

Slow Cooker

  1. Season the pork chops generously with salt & pepper.
  2. Optional step: Heat oil in a large skillet over medium-high heat. Add the seasoned pork chops and sear a few minutes on each side. Remove the pork chops and set aside.
  3. Add broth, Italian seasoning, salt, onion powder, pepper, and garlic to the slow cooker. Stir to mix well.
  4. Add the pork chops to the slow cooker. Top with butter.
  5. Cook HIGH 2-3 hours or LOW 4-6.
  6. Remove the pork chops & set aside. Stir in the heavy cream, Parmesan cheese and the thickening agent (if using). Add the pork chops back to the slow cooker until ready to serve.

Instant Pot

  1. Season pork chops with salt & pepper on both sides.
  2. Set Instant Pot to the sauté setting. When hot, add oil & the pork chops. Sear on both sides,  approximately 2-3 minutes per side. You may have to do this two at a time. Remove pork chops from from the pressure cooker and set aside.
  3. Turn off the pressure cooker. Add 1 cup of broth, Italian seasoning, salt, onion powder, pepper, and garlic. Stir to mix well. Using a wooden spoon scrape well the bottom of the Instant Pot to remove any bits that stuck to it, make sure you scrape it well to avoid burning during cooking.
  4. Add pork chops to the pressure cooker. Top with ghee/butter if using.
  5. Close lid and seal valve. Set high pressure and cook for 7-10 minutes. When done,  natural release pressure.
  6. Remove the pork chops & set aside. Turn the sauté. Stir in the heavy cream, Parmesan cheese and the thickening agent (if using). Cook a few minutes, stirring frequently.
  7. Return the pork chops to the pressure cooker until ready to serve. Top with sauce before serving.

What Are Pork Chops?

Pork chops are a versatile cut of pork from the loin of the pig. The loin is a muscle that runs from the shoulder to the rear of the pig. All pork chops are from this area but they can come in different cuts like loin rib chops, shoulder shops, and sirloin chops.

What Type Of Pork Chops To Use

Pork chops can be bought bone-in or boneless. You can use either in this recipe. Boneless pork chops are the same as a bone-in, just with the bone removed and the fat trimmed. Boneless pork chops are leaner because of this. While some people will say that bone-in pork chops have more flavor, personally I don’t have a preference. For this recipe I used boneless but if you use bone-in, you do not need to adjust the cooking time. You can make this recipe with up to 2 pounds of pork chops.

Make This Whole30 Compatible

To make this crockpot pork recipe Whole30 compatible, you need to follow a 4 simple steps:

  • Substitute full-fat coconut milk for the heavy cream
  • Omit the Parmesan cheese and use 2 tablespoons of nutritional yeast
  • Use ghee in place of butter
  • IF you use a starch thickening agent, use arrowroot starch.

Thickening the Cream Sauce

It’s time to make the cream sauce when there is 30 minutes left in the cooking time. Remove the pork chops and stir in the heavy cream and Parmesan cheese. I also add a slurry as a thickening agent. Cornstarch mixed with water is one option but personally my favorite is arrowroot flour. I mix 1 tablespoon with 1 tablespoon of water and add it to the slow cooker with the cream.

Made this tonight and it is delicious! The only thing I did differently was how I made the gravy. I have never had success in making gravy in the slow cooker, so I poured the liquid into a pan and thickened, then melted in the cheese at the end. I poured the gravy back over the pork chops to keep warm before serving. It was amazing! Very good and will make again and again. (I didn’t even bother to brown the chops before placing in the slow cooker.)

This was so delicious! I wish I had let the sauce thicken a bit more, but otherwise the flavor was amazing. Thanks for a great recipe!

ummm, your recipe instructions up near the top of the page are a bit confusing with the inclusion of the beef shanks...Is that to see if we are paying attention?

My sauce ended up all lumpy, kinda like frog eggs. Suggestions?
