Post holiday detox soup! This flavorful slow cooker recipe uses leftover turkey for an easy yet healthy soup that will keep you satisfied without packing on the pounds.
Still have leftover turkey? I got you. If not then you can use leftover chicken as well. Having just spent 3 of the last 5 weeks on vacation, I’m very much in need of a detox right now. This recipe is inspired by Giada De Laurentiis’s Turkey, Kale & Brown Rice Soup recipe. I saw a pic of the recipe on Pinterest and a light bulb went off in my head. I say inspired because the only similarities are the leftover turkey, kale and bell pepper.
Confession – I pretty much used whatever vegetables I could find in my produce drawer. Luckily for me everything paired together nicely. The key ingredient in this recipe is The Spice Cave’s WIND. I love all their spices but WIND is not only my favorite but also the one I use the most. Which I realized today when I noticed that I’m almost out. I’ll be placing another order this evening!
- Add all the ingredients to the slow cooker.
- Stir to mix well.
- Cook HIGH 2-3 hours or LOW 4-6 or until kale is tender.
I didn’t use any rice or potatoes. Again, this is supposed to be a detox soup so I wanted to keep it light. Having said that, a 1/2 lb of diced potatoes, sweet potatoes or butternut squash would be a nice addition.
