Jerk chicken…quick and in the slow cooker! Grab your favorite jerk seasoning (or use the one provided here) for this easy slow cooker recipe. With only 5 ingredients, you can pretty much use any cut of chicken and serve the finished product so many different ways.

I make some sort of variation of Caribbean food quite frequently. For this recipe you will need your favorite jerk seasoning. I used Caribeque’s spicy Jamaican jerk seasoning. It’s a blend of allspice, scotch bonnet peppers, and other Caribbean spices. It’s one of my favorites and no, I’m not being paid to write that. One of the main reasons I love it is because it’s sugar free. If you don’t have a pre-made jerk seasoning, there’s a quick blend for you to use below.
While I used chicken thighs, this is like most recipes on my blog where you can use pretty much any cut of chicken whether it be dark or white meat, skin-on or boneless, skinless. I used skin-on, bone-in chicken thighs. I also used canned corn and black beans. There’s absolutely nothing wrong with using canned or frozen vegetables by the way.
Depending on what jerk seasoning you use, you may want to add some salt and pepper to this recipe.
I used 2 pounds of chicken but you can use up to 3 pounds without having to alter the recipe. No, I did not use any liquid. I find that the chicken thighs will release enough. You can use 1/3 cup low-sodium broth or even water if you like.

Ingredients
- 2–3 lbs chicken thighs
- 15 ounces black beans, drained & rinsed
- 15 ounces corn, drained & rinsed
- 2–3 tbsp jerk seasoning (see blog post)
- 1/4 cup fresh cilantro, chopped
Instructions
- Add beans and corn to bottom of the slow cooker. Stir to mix.
- Season chicken with jerk seasoning and add to the slow cooker.
- Cook HIGH 2-3 hours or LOW 4-6.
- Garnish with fresh cilantro.
