Enchiladas are a staple in Mexican cuisine; enchilada dip takes these the flavors of enchiladas and transforms them into a creamy, cheesy, party treat. Ingredients For Slow Cooker Enchilada Dip

  • Ground Meat
  • Enchilada Sauce
  • Cheddar Cheese
  • Cream Cheese
  • Diced Green Chiles
  • Taco Seasoning

How To Make Enchilada Dip In The Crockpot

Slow Cooker

  1. Heat oil large skillet over medium-high heat. Add ground meat and cook, a few minutes until no longer pink. Crumble the meat as it cooks. Drain grease and add the ground meat to the slow cooker.
  2. Add all the remaining ingredients. Stir to mix well. Cook HIGH 2-3 hours or LOW 4-6.
  3. Stir well before serving.

Instant Pot

  1. Turn on the Instant Pot and select sauté. Once hot add oil and ground meat to the pot. Cook a few minutes until meat is no longer pink. Drain grease.
  2. Turn the Instant Pot to a medium sauté. Add the enchilada sauce, green chiles, taco seasoning, and cream cheese, stirring continuously until the cream cheese is melted. Whisk in the cheddar cheese one cup at a time and cook a few minutes until cheese is melted. You’ll need to stir this continuously as it cooks.

What Type Of Ground Meat To Use

I purposely left the ingredient for the meat generic with – ground meat. I used ground beef to make this enchilada dip but you can use your preferred meat whether it be ground beef, turkey, chicken, or even pork. While usually an optional step, browning the meat is listed as required in this recipe. This is the case whether you’re using a slow cooker or Instant Pot. I put this as a required step because having tried it using raw meat, I found that the dip comes way too greasy when combined with cheddar & cream cheese. Trust me, take a few minutes to brown the meat & drain the grease first.

I like to use my homemade taco seasoning. I won’t preach because I think we all know by now that homemade seasoning blends are better than store-bought packet that are full of ingredients you can’t pronounce. Make This A Halloween Dip

This slow cooker enchilada dip is perfect for your Halloween potluck! Blue tortilla chips and sliced olives will easily turn this into a Halloween theme jack-o-lantern party dip. If you’re taking this dip to a party or potluck, you can even cook the dip a day ahead & reheat it on the low or warm setting for a couple of hours prior to serving.

How To Serve This Enchilada Dip

What you serve this dip with will depend on your dietary restrictions. If you don’t have any….serve it with tortilla chips! Personally I serve this slow cooker enchilada dip with low-carb or grain-free chips OR veggies like celery or carrots.

  • Garnish the dip with green onion or your favorite toppings like jalapeño or sour cream.
  • Store leftovers in the refrigerator for up to 4 days.

I used half a can of Chipotle Peppers in Adobo Sauce instead of taco seasoning - my lazy hack for quick taco meat! (I freeze the rest of the can for next time). Very good recipe, easy and quick to make! Made it for my husband to take into work for a potluck and everyone loved it!

If I wanted to do 2lbs ground beef instead of 1 do I double the other ingredients?

Depends. If you want your dip extra "meaty" (which sounds really good to me btw), I wouldn't. However if you're looking for a larger portion, yes I would double all the other ingredients as well.
