Chicken pizza casserole is an easy casserole the entire family will enjoy. Make this low-carb pizza-inspired meal in your slow cooker or Instant Pot.

Where are my pizza fans at? I removed the pizza crust and used chopped chicken breasts as a base to make this recipe low-carb and keto-friendly. By the way, you can actually make regular pizza with a dough crust in the slow cooker. Shameless plug – there’s a recipe for one in my 1st cookbook, The Easy & Healthy Slow Cooker cookbook. But these days, I’m leaning low-carb so this version better suits my current lifestyle.
Chicken – Breasts or Thighs?
The short answer is – up to you. I like to use boneless, skinless chicken breasts with this recipe but you can absolutely use boneless, skinless thighs if that’s what you prefer. If you use chicken thighs for the slow cooker, add an extra 30-60 minutes of cooking time and for the electric pressure cooker (Instant Pot), add an additional 2-3 minutes. You need to do this since dark meat takes longer to cook than white meat. In general, cook the chicken until the internal temperature reaches 165 degrees F.

This is a cheesy casserole that’s intended to be scooped out and eaten so I prefer boneless, skinless meat. I have not used bone-in or skin-on meat with this recipe. In theory you can but I have not tried it. If you do, let me know how it turns out in the comments.
Pizza Toppings
What I love most about this recipe is that when it comes to the toppings, the sky is the limit! I wanted a meaty pizza casserole so I used a combination of pre-cooked sausage (I pre-cooked the sausage so I could drain the grease) & pepperoni, approximately 6 ounces total. Want more meat? Use more! Cover it completely with meat if you want. Make it a ‘vegetarian’ pizza by using chopped vegetables like olives, bell peppers, onions, etc. Of course the dish is not a vegetarian dish because it has a layer of chicken on the bottom. Whatever you like on your pizza, you can use here as your topping for this pizza casserole. Don’t have basil? Use oregano. Don’t have garlic salt? Use a combination of salt and minced garlic.

Slow Cooker/Instant Pot Chicken Pizza Casserole (Low-Carb, Keto)

Ingredients
- 2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup diced tomatoes
- 4 ounces sausage, cooked
- 2 ounces pepperoni, sliced
- 1 tsp garlic salt
- 1/2 tsp dried basil
- 1/4 tsp onion powder
- Pepper to taste
- 2 cups mozzarella, shredded
- 1 tbsp oil + 1/4 cup low-sodium chicken broth or water (for IP)
Instructions
Slow Cooker

Spray slow cooker with cooking spray.

Add chicken to the bottom of the slow cooker. Add diced tomatoes on top.

Sprinkle evenly with with garlic salt, basil, onion powder and pepper.

Add mozzarella cheese evenly across top. Add sausage & pepperoni.

Cook HIGH 2-3 hours or low 4-6 (make sure internal temperature for the chicken is 165° Fahrenheit).
Electric Pressure Cooker (Instant Pot)
- Turn the Instant Pot to saute. Season chicken with garlic salt, basil, onion powder, and pepper. Once the IP is hot, add the oil & chicken and cook a few minutes on each side until slightly browned.
- Add diced tomatoes and broth (or water). Stir to mix well.
- Close lid and seal valve. Set high pressure and cook for 9 minutes (make sure internal temperature for the chicken is 165° Fahrenheit). Quick release pressure.
- Top with shredded mozzarella cheese, pre-cooked sausage, and pepperoni. Cook on warm until cheese is melted.

I added some fresh basil as garnish on top. This is optional of course. I used a large 6-quart slow cooker or Instant Pot for this recipe.
