I understand chopped liver isn’t for everyone. To be honest, I don’t eat it too often myself. I never thought to make my own chopped liver until my half-iron man training husband asked for a high-protein snack. I remembered he likes chicken liver and I happen to see some on sale at my local grocery store so here we are with this slow cooker chopped liver recipe.

What Is Chopped Liver?

Chopped liver is a liver pâté popular in Jewish cuisine that’s served at Shabbat, and holidays like Rosh Hashanah and Passover. You will find chopped liver on most Jewish deli menus. The main ingredients are very simple – liver, onion, and hard-boiled eggs. You can use chicken or beef liver. I always use chicken liver. There are tons of different chopped liver recipes out there. This is one of those recipes where you can tailor it to your own liking. My version uses simple seasonings like salt, pepper, and parsley.

Schmaltz, Ghee, Butter

This recipe is high protein but also high fat because of the schmaltz. Schmaltz is a yiddish word that loosely translates to rendered chicken or goose fat. It can be hard to find so you can substitute ghee or butter schmaltz if you want. And of course you can add more than 2 tablespoons of schmaltz (or whatever fat you’re using). Adding more will make this higher in fat for a keto diet.

Blend The Chicken Livers

When the chicken livers are done cooking, you will blend the livers down to your desired consistency. This is the case whether you use your slow cooker or pressure cooker. I like to use my immersion blender because I can put it directly in my slow cooker or Instant Pot. You can also use a regular blender or food processor.

How To Serve Chopped Liver

Serve this slow cooker or Instant Pot chopped chicken liver with veggies like cucumbers, celery, or carrot sticks to keep it low-carb, keto, paleo, or whole30. If you’re not following a particular diet, other serving options include matzo, crackers, pita or some sort of bread.

Tips For This Chopped Liver Recipe

  • Let the chopped liver cool before serving.
  • You can serve this as an appetizer or eat it as a snack. This is also a great pre or post workout meal.
  • Store this in a covered container in the refrigerator for 6-7 days. You can also freeze this chopped liver after it’s done cooking & has cooled.

I used a 3.5-quart slow cooker for this recipe.

Ingredients

  • 1 pound chicken livers
  • 3 eggs, hard-boiled
  • 2 tablespoons schmaltz or ghee
  • 2 tablespoons water or low-sodium chicken broth for slow cooker, 1 cup for Instant Pot
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried parsley
  • 1 teaspoon fresh parsley, chopped for garnish
  • 1 tablespoon oil (for Instant Pot)

Instructions

Slow Cooker

  1. Melt schmaltz/ghee in a large skillet over medium-high heat. Once melted, add livers and cook approximately 2-3 minutes or until the outsides are seared.
  2. Add liver and all remaining ingredients to the slow cooker. Stir to mix well.
  3. Cook HIGH 1-2 hours or LOW 2-4.
  4. Blend food down to a chopped or puree consistency.
  5. Garnish with fresh parsley. Serve cooled.

Instant Pot

  1. Turn on the IP and select sauté. Once hot add oil and onions to the pressure cooker. Cook 3-5 minutes or until vegetables start to soft.
  2. Add garlic and chicken livers and cook a until the chicken livers outsides are seared. Approximately 2-4 minutes.
  3. Turn off the Instant Pot. Stir in the water and using a wooden spoon scrape the bottom of the Instant Pot to remove any bits that stuck to it, make sure you scrape it well to avoid burning during cooking.
  4. Add the hard-boiled eggs, schmaltz/ghee, salt, pepper, and dried parsley. Stir to mix well.
  5. Close lid and seal valve. Set manual, high pressure to 5 minutes. Quick release pressure.
  6. Drain water.
  7. Blend food down to a chopped or puree consistency.
  8. Garnish with fresh parsley. Serve cooled.

Made this again last night using chicken livers in the Instant pot. I keep missing that instruction to drain the water. But it still came out very well.

Yay IP. Had to hard boil the eggs first (5-5-5). Had a pound of beef liver steaks in the freezer, so skipped the liver sauté and added the frozen steaks. After, cut int small pieces and added back. Immersion blended. It came out a little thin. I could have drained a bit first (FLAVOR!), or left a little chunkier. I’ll see if it thickens as it cools and overnight in the fridge. THANK YOU!
