No, this is not low-carb, paleo, or whole30. But from the reaction of my followers when I made this on social media, I don’t think you’ll care. If you saw me make this on social media months ago, thank you for your patience. This was a popular one that took longer than I expected to get posted here on the blog. After 3 rounds of recipe testing, I almost gave up but I’m glad I didn’t. Having made this several different ways, I ultimately went with casserole form of garlic Parmesan chicken & potatoes. But you can make this many different ways. I’ll break it down for you…

The Chicken
My personal preferred way to make this is the way you see it here in the pics and video – using boneless, skinless chicken breasts. However you can actually use your preferred cut of chicken whether it be boneless or bone-in, breasts, thighs, legs, or a combination legs & thighs. I know this because I made this recipe using all of those cuts as well. If you use dark meat, add an additional hour or so to the cook time because dark meat takes longer to cook than white meat. If you choose to use skin-on chicken, you may want to brown the chicken in a skillet before adding it to the slow cooker. This is an optional step of course, you can throw it in there raw. If you’re looking for crispy skin, after the chicken is done cooking, you can remove it from the slow cooker or Instant Pot and place it under your oven’s broiler for a few minutes. Again, also optional.

The Potatoes
Waxy potatoes always work best for slow cooking because they hold their shape better than other forms of potatoes. Having said that, like most of my recipes, I encourage you to use the ingredients you have & like. Meaning, you can use your preferred potato whether it be a waxy potato like red or yellow, russet potato, sweet potato, etc. If you use non-waxy potatoes like russet or sweet potatoes, I suggest you cut them into larger chunks than you usually would. This will help them hold their shape during the cooking process and not turn mushy on you.

The Parmesan
I used a combination of grated and shredded Parmesan. How much Parmesan to use is debatable in my household. This too went through many trials and I finally settled on 1/2 cup of grated Parmesan mixed in and the shredded Parmesan added the last few minutes of cook time. Don’t have shredded Parmesan? Use all grated. If you have shaved Parmesan, use that. You have some leeway here to make this recipe work for you.

The Garlic
Minced garlic is in almost every single recipe that I post. I go through garlic probably more than any other ingredient. Since I used full tbsp of garlic powder, I used a little less raw garlic than I normally would. If you like your food really garlicky, add an additional clove or two of minced garlic to the recipe.

Slow Cooker/Instant Pot Garlic Parmesan Chicken & Potatoes
- Prep Time: 10 minutes
- Cook Time: 3 hours
- Total Time: 3 hours 10 minutes
- Yield: Serves 4 1x
Ingredients
- 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 1 1/2 pounds red potatoes, chopped
- 1/2 cup Parmesan cheese, grated
- 3/4 cup Parmesan cheese, shredded
- 2 garlic cloves, minced
- 1 tablespoon garlic powder
- 1 tablespoon Italian seasoning
- 1 tablespoon extra-virgin olive oil
- Salt & pepper to taste
- 3/4 cup low-sodium chicken broth (for Instant Pot)
Instructions
- Add all ingredients EXCEPT the shredded Parmesan cheese to the slow cooker. Stir to mix well.
- Cook HIGH 2-3 hours or LOW 4-6.
- Top with shredded Parmesan cheese.
- If you turn off the slow cooker and let it sit with the lid on, the cheese will melt in a few minutes.
- Pour broth into the pressure cooker. In a large bowl add all the ingredients EXCEPT the shredded Parmesan cheese. Pour the food mixture on top of the broth.
- Close lid and seal valve. Set high pressure and cook for 10 minutes (make sure internal temperature for the chicken is 165° Fahrenheit). When done, quick release pressure.
- Top with shredded Parmesan cheese.
- If you turn off the Instant Pot and let it sit with the lid on, the cheese will melt in a few minutes.
I like to serve this garlic Parmesan chicken & potatoes with a simple salad or side of green vegetables.

Can I use Italian dressing seasoning packets instead of Italian seasoning?

I try to understand how to use with instant pot. It is not clear. Is it “SlowCooker” at instant pot. I guess I will use this see what happen.
If you’re using the Instant Pot you should use the Instant Pot instructions not the slow cooker instructions.
It doesnt say instant pot , so is that the same as the pressure cooker

I accidentally added all of the ingredients all at once including the cheese…….is this going to completely ruin the dish?

Delicious!!! Was scared when about 30 mins into cooking in the slow cooker, I didn’t see any liquid, so I added about 1/8 cup of Olive Garden dressing that I found in my fridge. We are it with a Garlic Parmesan pasta and it was to die for. My husband wants to do it again next week and add some mushrooms!

What is the salt/sodium content for this dish? My boyfriend just got put on a low sodium diet. This has been so hard trying to adjust! There is salt in everything! 😢

Hi Dawn, the majority of the sodium comes from the 1.5 cups of Parmesan cheese. If you use 1/2 cup rather than 1.5 cups, the sodium content will be half of what it is, around 332.7mg. It won’t be a cheesy of course. Hope that helps!
My boyfriend is also low sodium. I use no salt added broth for all our recipes, and omit the actual salt. I’ll usually add in a bit more garlic, go a bit more on the black pepper and add some red pepper flakes for a kick (if it’s a recipe that will handle it) and that works well. The no salt broth will cut the sodium in this recipe substantially!
I put in a cup of grated Parmesan instead of a 1/2 cup. Should I just use less grated parmesan? Or put the same amount and just make it extra cheesy?

Well, tried this recipe today, made some adjustments, added onion red pepper and green pepper after 4 hours on low in the crockpot.. It was just enough to give it some additional color and flavor.

My instant pot doesnt let me set time I have to choose an option like poultry, meat, soup etc. I’m gonna give it a try on the poultry setting and hopefully it cooks the potatoes too. I also added some onions just because we like onions in everything! Haha Here’s hoping this turns out as planned!
Can you use dairy free Parmesan? My son is ANA to dairy, and eggs, so finding recipes are so hard these days.

Made this today for dinner! It was delicious. For everyone saying there wasn’t enough seasoning…. add more. My husband added ranch to his (might do this for the whole pot next time), both of my boys and I just added more salt.

This recipe was delicious, whole family approved! Only thing I added was some cut up carrots for a veggie and some extra seasonings because I always like to put my own touch to it! Great job!
How would I adjust this for an 8 qt IP? I know I need more liquid. But should I cook more chicken and potatoes then?
I would imagine so but I have not made this in a IP larger than 6-quarts so I cannot say for certain.

What if I used the chicken broth and the oil for the Crock-Pot? I’m freaking out that I’ve possibly ruined another meal. 😟
It should be okay, but it will have lots of liquid. When it’s done cooking before you add the shredded Parmesan cheese, use a slotted spoon to remove the chicken and potatoes from the slow cooker. Transfer it to a a baking dish, add the shredded Parmesan cheese and bake (or microwave if using a microwavable dish) until cheese is melted.
I found even in my pressure cooker there was alot of liquid. Maybe I did something wrong. My cooker is a Cosori. Delicious anyway though! Will cook this again.

can you cook this in,an instant pot. And if so for how long? I am thinking about trying this with one chicken breast ( husban will not eat dark meat) and the rest with the thighs. How do you think that will turn out?
The instant pot instructions are already listed. The recipe calls for chicken breasts so it will work just fine.

Absolutely. I would use 2 pounds of tenders.
