Slow Cooker/Instant Pot Leftover Turkey Soup

Ingredients

  • 1/2 to 1 pound leftover turkey, diced or shredded
  • 8 ounces uncooked rice (brown or white), uncooked cauliflower rice, uncooked pasta or 2 medium-size uncooked zucchinis, cut into spaghetti like strands
  • 8 cups low-sodium chicken broth (or a broth/water combination)
  • 1/3 cup onion, diced
  • 2 celery stalks, sliced
  • 2 medium-size carrots, diced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon pepper
  • 1 tbsp oil (for pressure cooker)

Instructions

Slow Cooker

WITH RICE

  1. Brown rice: add all the ingredients to the slow cooker including the uncooked brown rice and cooked turkey. Stir gently. Cook HIGH 3-4 hours or LOW 6-8 or until rice is tender.
  2. White rice: add all the ingredients to the slow cooker except the uncooked white rice. Stir to mix well. Cook HIGH 2-3 hours or LOW 4-6. Stir in rice and cook an additional hour or until rice is tender.
  3. Cauliflower rice: add all the ingredients to the slow cooker except the cauliflower rice. Stir to mix well. Cook HIGH 2-3 hours or LOW 4-6. Stir in rice and cook an additional 15-30 minutes or until rice is tender.
  4. Remove bay leaves before serving.

WITH NOODLES OR ZOODLES

  1. Add all ingredients EXCEPT for the noodles/zoodles into the slow cooker. Stir gently.
  2. Cook HIGH 3-4 or LOW 6-8.
  3. Add preferred pasta noodles or zucchini zoodles into the slow cooker. Cook on HIGH an additional 10-20 minutes or until pasta or zucchini is tender.
  4. Remove bay leaves before serving.

Electric Pressure Cooker (Instant Pot)

WITH RICE

  1. Turn on the pressure cooker and select Sauté. Once hot add oil to the pot.
  2. Add celery, carrots, and onions and cook for a 5-7 minutes or until vegetables are soft. Add garlic and cook an additional minute. Turn off the pressure cooker.
  3. Add broth and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.
  4. Stir in rice, salt, thyme, rosemary, and pepper. Add bay leaves.
  5. Close lid and seal valve. Set high pressure and cook for 5 minutes for white rice and 20 for brown rice. If using cauliflower rice, do not add yet.
  6. Natural release pressure for 10 minutes then manually the remaining pressure.
  7. Turn off pressure cooker and stir in cooked turkey. If using cauliflower rice, stir that in now too.
  8. Remove bay leaves before serving.

WITH NOODLES OR ZOODLES

  1. Turn on the pressure cooker and select Sauté. Once hot add oil to the pot.
  2. Add celery, carrots, and onions and cook for a 5-7 minutes or until vegetables are soft. Add garlic and cook an additional minute. Turn off the pressure cooker.

  6. Turn the pressure cooker to Sauté and stir in the cooked turkey and uncooked noodles or zoodles. Cook 3-5 minutes or until pasta or zucchini is tender.
  7. Remove bay leaves before serving.
