Middle Eastern kofta meatball patties, potatoes (sweet) and tomatoes cook together in this simple yet hearty paleo & whole30 slow cooker recipe.
I love finding inspiration on social media. I saw a baked version of this on PitaChickLove‘s Instagram page a few months ago. I knew right away it would make a good slow cooker recipe and I was right. Thank you so much Joyce for inspiring this recipe. I will forever refer to it as Joyce’s kofta casserole.
Kofta, kefta, kafta…it’s spelled differently depending on which Middle Eastern cuisine you are following. Regardless, the basic concept is the same – balls of ground meat mixed with spices and onions. Very simple but packed with flavor. This is very basic – kofta patties, potatoes, and tomatoes. That’s it. Simple yet don’t think it’s going to be bland because it is not.
Meat. I used my chicken kofta kebab recipe as a base for my kofta. Ok, I pretty much just double all the ingredients and used 2 lbs of Felton Angus Ranch ground beef rather than chicken. You can use your preferred ground meat whether it be ground beef, chicken, turkey or pork.
Potatoes. I used white sweet potatoes. You can use your preferred potato whether it be yams, orange-flesh sweet potato, russet potato, etc.
Tomato sauce on top but NO LIQUID. I know you’ll be tempted but you don’t need to add any. The liquid you see in the pics is from the natural juices from the food. I had a hard getting my tomato sauce on nice & neat so I gave up and guess what – it didn’t matter if it was on neat or not.Print
Slow Cooker Kofta Casserole (Paleo,Whole30)
- Prep Time: 15 minutes
- Cook Time: 4 hours
- Total Time: 15 minutes 4 hours
- Yield: Serves 4 1x
- 4 large (approx 2.5 lbs) potatoes or sweet potatoes, peeled & sliced into 1/4-inch rounds
- 4 large (approx 3 lbs) tomatoes & sliced into 1/4-inch rounds
- 8 ounces tomato paste
- Salt & Pepper to taste
- 2 lb ground meat
- 1 small onion, diced or 2 tbsp dried chopped onion
- 3 garlic cloves, minced
- 2 tbsp parsley
- 1 tbsp coriander
- 2 tsp cumin
- 1 tsp salt
- 1 tsp pepper]
- 1/2 tsp nutmeg
- 1/2 tsp mint
- 1/2 tsp paprika
- Spray the slow cooker with cooking spray.
- In a large bowl, mix together kofta ingredients. Form kofta into even size patties using approx 2-3 tbsp per patty.
- Arrange kofta patties, potatoes, and tomatoes in the slow cooker, alternating each one. Or arrange it however it fits. Season with salt & pepper to taste. Spread tomato paste on top.
- Cook HIGH 3-4 hours, LOW 6-8.
Get creative! You can vegetables to this like sliced zucchini or eggplant.
How many kofta meatball patties & slices of tomatoes and potatoes you need will depend on the size & shape of your slow cooker and how thick you slice. I needed more when I made this using my 3.5-quart casserole slow cooker than when I made it in my oval 3.5-quart slow cooker. Same quart size but the different shape meant I needed more tomatoes & potatoes. For your 1st time making this, it might be a bit of trial and error. Double this recipe and use your 6-quart if you’re feeding a larger crowd.
