Crockpot Cajun Chicken Sausage Soup + VIDEO

Crockpot  Cajun chicken sausage soup is a flavorful and comforting soup that uses leftover chicken (or turkey).  Using Cajun seasonings, Andouille sausage, and the holy trinity of cooking, this easy soup recipe will impress any crowd. The best part…it’s even better the next day!  Instructions to make this easy soup in the Instant Pot are also included.

  • Leftover Chicken or Turkey
  • Andouille Sausage
  • Cajun Seasoning
  • Bell Pepper
  • Onion
  • Celery
  • Garlic
  • Diced Tomatoes
  • Chicken Broth

How To Make Cajun Chicken And Sausage Soup In The Crockpot

Slow Cooker

  1. Add all the ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Once hot, add the add oil to the pot. Add onion, bell pepper, celery and cook 3-5 minutes or ,until veggies begin to soften.
  2. Add the broth & deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.
  3. Add leftover turkey, andouille sausage, diced tomatoes, and Cajun seasoning. Stir to mix well.
  4. Select manual setting, high pressure for 20 minutes. When cook time is done, quick-release the pressure.

Cajun Flavors

I didn’t want to make another basic turkey & sausage soup so I put a Cajun spin on it. I have lots of Cajun recipes on this blog so it’s not secret that I love Cajun food. Are you familiar with mirepoix? Mirepoix is a combination of diced onions, carrots, and celery. It’s used as a base for lots of traditional recipes like soups, stews, and stocks. The holy trinity, also known as the holy trinity of Cajun/Creole cooking is the Creole version of mirepoix. It consists of one part bell pepper, one part celery, and one part onion. It’s the base for lots of traditional Cajun recipes like gumbo, jambalaya, and étouffée so I used it here as a base for this Cajun turkey & sausage soup.

Using Andouille Sausage

This Cajun soup uses andouille sausage.  Andouille sausage is originated in France but most Americans recognize it from Louisiana’s Cajun/Creole cooking.  Most Cajun andouille sausage that you’ll find in the grocery store come precooked like a generic smoked sausage. If you can’t get a hold of andouille sausage, you can use any smoked sausage in its place.

Make This Whole30 Compatible

To make this a Whole30 compatible soup, you will need to use a Whole30 compliant sausage. Niman Ranch makes a sugar-free andouille sausage. If you can’t find that brand, use a different smoked sausage.  For a list of Whole30 compatible sausage brands, click HERE.

 

Storing & Freezing Turkey & Sausage Soup

If you have leftover Cajun chicken and sausage soup, you can store or freeze it for later use. Store leftover soup an air-tight container in the refrigerator for 3-4 days. To freeze leftover turkey & sausage soup, let the soup cool completely. Once cooled, add the soup to an air tight container or freezer-friendly plastic bag. Store the soup in your freezer for up to 2 months. To reheat frozen soup you have two options. You can either thaw the soup overnight  in the refrigerator OR add the soup directly to the slow cooker or Instant Pot & thaw on the warm setting!

 

 

FAQs & Tips

  • Keep in mind that the leftover turkey is already seasoned and both andouille sausage & Cajun seasoning carries some heat.
  • Most slow cooker and Instant Pots have a warm setting. If you’re not going to eat your Cajun chicken and sausage soup right away, use it! The warm setting will keep the soup heated through until it’s ready to serve. Please note that all appliances are different. If your slow cooker or Instant Pot heats on the hotter side, you may need to shut it completely off.
  • Make this a creamy Cajun soup! Stir in 1 cup of whipping cream or coconut milk (depending on your dietary restrictions) to the soup after it’s done cooking and let it cook an additional 10 minutes with the lid on but the appliance off.
  • I used a 6-quart slow cooker /or Instant Pot for this recipe.

  • 3/41 pound leftover cooked chicken or turkey, chopped or shredded
  • 14 ounces andouille sausage, cut into 1-inch rounds
  • 1 tablespoon Cajun seasoning (if your Cajun seasoning doesn’t have salt, add 1 teaspoon salt)
  • 3 cups low-sodium chicken broth
  • 15 ounces diced tomatoes
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 celery stalk, sliced
  • 1 tablespoon oil (for Instant Pot)

Deee-licious! For Thanksgiving I cooked a turkey from Popeyes Chicken. Of course, it was Cajun flavored. I made this soup with the leftover turkey. I added okra. My husband and friend loved it. I'll make this again.

When I saw the recipe I was so excited to make it that I started hiding leftover turkey from my fiance so that there would be some left for the soup. Super easy to make in the InstaPot. Good heat between the seasoning and the andouille sausage. I threw some rice in to give it a little more substance for a standalone meal.
