A light, homemade lemon garlic sauce accompanies any cut of chicken, potatoes or sweet potatoes, and your favorite vegetable for this flavorful whole30 and paleo slow cooker recipe.
This is another semi-generic recipe. This one in particular is all about the sauce. A homemade sauce in my opinion is the key to a healthy slow cooker recipe. By creating your own sauce you gain more control over what you’re actually ingesting. And they’re just as much flavorful as store-bought. In fact I think you’ll find that a homemade sauce tastes better,
A good example of what I’m talking about is this lemon garlic recipe. The sauce is made up of just water, fresh lemon juice, garlic and a few common herbs. Basic and easy yet packed with flavor AND you most likely already have all the ingredients you need in your pantry.
I kept the title of the recipe vague because this time I used chicken legs & thighs, white sweet potatoes, and asparagus but last time I made this, I used with chicken breasts, russet potatoes, and green beans. The cut of meat, potatoes and veggies are interchangeable. Breasts, thighs, legs, skin-on, skinless, bone-in, boneless, heck you can even use pork chops. Potatoes, sweet potatoes , red potatoes, fingerlings potatoes, butternut squash, pumpkin…sky is the limit. What’s your favorite vegetable? You can most likely you can throw it in – green beans, broccoli, zucchini, bell pepper, onions, asparagus, I’ve even added chopped kale (at the end of cooking). Note: if you use white meat then be sure to reduce the cook time by an hour or so otherwise the meat might dry out.
I know it might not look like enough sauce because all the food will not be fully submerged but trust me, it is.Print
- 2 lbs chicken
- 1 1/2 lbs potatoes or sweet potatoes, peeled & chopped
- 1 lb vegetables
- 1 lemon, sliced
- 1/3 cup lemon juice
- 1 lemon, sliced
- 1/2 cup water or low-sodium chicken broth
- 4 garlic cloves, minced
- 2 tsp basil
- 1 1/2 tsp garlic salt
- 1/4 tsp pepper
- 1/8 tsp red pepper flakes
- Place chicken, potatoes & vegetable in the bottom of the slow cooker.
- In a small bowl, mix together sauce ingredients.
- Pour sauce over food in slow cooker.
- Top with sliced lemons.
- Cook HIGH 3-4 or LOW 6-8 hours or until the chicken is done.
When making the lemon garlic sauce, I tend to go heavy with the lemon and use a little more than 1/3 cup of lemon juice but that’s just my personal preference.
