Mozzarella stuffed slow cooker meatballs. This healthy meatball recipe only uses a few ingredients and is an absolute crowd pleaser.
Today is National Meatball Day. What better to celebrate than with some jumbo mozzarella stuffed meatballs?? It being National Meatball Day got me thinking about the tons of different types of meatballs you can make. There are seriously probably hundreds. And I promise you, I will make a lot of meatballs recipes. Let’s start things off though with easy stuffed mozzarella meatballs. These might look fancy but trust me, they’re pretty effortless. This recipe in particular only includes a few ingredients but you can add much more if you want (garlic, herbs,etc). I wanted to kept it simple: meat, seasoning, mozzarella, marinara sauce.
My meatballs are a combination of chicken and turkey: I uncased 1 lb of chicken sausage and threw it in my food processor to grind it up. I then mixed it in with 1 lb lean ground turkey. I knew the oil (or grease as some might call it) from the sausage would bind the meat and mozzarella together so I did not use any breadcrumbs or eggs. You can use whatever combo of ground meat and sausage you like meaning you can combine things like ground beef and pork sausage. For the seasoning, if you don’t have an Italian seasoning already, use this one!
I put a whopping 3 mozzarella balls in each meatball. Yup 3. I wanted these large and ccheeeessyy. If you’re not going to make jumbo meatballs then you should get anywhere between 12-24 meatballs out of this depending on the size. I only used 1 jar of marinara sauce as a base in the slow cooker. This made five meatballs for me. Correction, this made five JUMBO meatballs for me.
- 1 lb ground meat
- 1 lb ground sausage
- 1 jar marinara sauce
- 8 ounces mozzarella balls
- 2 tsp Italian seasoning
- Mix ground meat, ground sausage, and seasoning together. Form into a ball and then flatten the ball.
- Add 1-3 mozzarella balls to the center of the flattened meat. Re-form meat around the mozzarella and shape into a ball. Repeat until all the meat is used.
- Pour marinara sauce in the bottom of your slow cooker.
- Add the meatballs.
- Cook HIGH 2-3 hours or LOW 5-6.
