- 1 pound potatoes or sweet potatoes, chopped or diced
- Salt & pepper to taste
- 1/3 cup compliant ketchup
Meatloaf:
- 2 pounds ground beef
- 1 egg
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 tablespoon compliant ketchup
- 1/2 cup almond flour
- 2 tablespoons Italian seasoning
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
Instructions
- Spray the slow cooker generously with cooking spray.
- In a large bowl, mix together all the meatloaf ingredients until well blended. Shape the meat mixture into a loaf and place the meatloaf on a sheet of foil OR place it directly in the slow cooker.
- Add the chopped potatoes around the meatloaf. Season the potatoes with salt & pepper. If your meatloaf is in the foil, pour 1/4 cup of water on the potatoes.
- Cook on HIGH 3-4 hours or LOW 6-8.
- 30 minutes before cook time is completed, spread ketchup on top of meatloaf, cover & cook the remaining 30 minutes. You can also let the meatloaf cook the entire way through, remove it from the slow cooker, spread the ketchup on top and broil it in the oven for a few minutes.
Notes
You may want to spoon out excess grease before you add the ketchup on top.
