Beverages – another category I don’t make a lot of recipes for. I don’t know why not. Slow cookers are great for making hot beverages, especially during the fall & winter months!
What Is Pumpkin Spice Latte?
We have Starbucks to thank for the pumpkin spice latte. They created the fall themed coffee drink in the early 2000’s and to date it’s their most popular seasonal drink. Their pumpkin spice latte combines espresso, milk, sugar, and pumpkin spices; this is not a copycat Starbucks latte. This is a vegan, paleo version that’s made in the slow cooker or Instant Pot.

All The Pumpkin
This recipe for pumpkin spice latte calls for a combination of pure pumpkin puree and pumpkin pie spice. Be sure to use pure pumpkin puree not pumpkin pie filling. I use canned pumpkin but fresh, cooked pumpkin puree works too. Canned pumpkin is easier & you should be able to find it at your local grocery store. If you don’t have pumpkin pie spice one on hand, that’s okay you don’t need to go out and buy it. Pumpkin pie spice is a combination of cinnamon, ginger, cloves, and nutmeg. In place of 1 1/2 teaspoons of pumpkin pie spice you can use: 1/2 teaspoon cinnamon + 1/2 teaspoon ground ginger + 1/4 teaspoon cloves, 1/4 teaspoon nutmeg.
What Type Of Coffee To Use
What type of brand of coffee you use for this pumpkin spice latte is up to you. Keep in mind that the coffee will be diluted with nut milk so you might want to brew your coffee it a little stronger than you normally would.
A Healthy Version
Most pumpkin spice latte recipes use some sort of sugar. If you’re new to this blog (welcome) you’ll find that there’s one ingredient I don’t use in any of my recipes and that’s granulated sugar. In place of sugar, I encourage you to use a natural sweetener like maple syrup (vegan, paleo) or honey (paleo but not vegan). Personally I don’t drink regular milk so I was going to use almond milk regardless. You can use your preferred nut milk with this latte recipe whether it be almond milk or cashew milk. Another option is to use carton coconut milk.
Make This Keto
This healthy pumpkin spice latte recipe is vegan and/or paleo depending on what sweetener you use. It can easily be made keto friendly by substituting a few ingredients. In place of the maple syrup use monk fruit sweetener or stevia. You can keep the nut milk or for added fat use full-fat coconut milk.
Pumpkin Spice Latte Notes & Tips:
- “Meal prep” by brewing your coffee ahead of time.
- There will be spices in the latte when it’s done cooking. To remove those, strain the latte through a mesh strainer.
- Don’t over sweeten the pot. You can always add additional sweetener to the individual serving.
- Store leftovers in a sealed container for up to 3 days in the refrigerator.
- Let this sit on the warm setting! If your slow cooker or Instant Pot has a warm setting, this is the recipe to use it with.
Hot Beverages
I like to serve this topped with whipped topping (Reddi Wip makes a vegan, dairy-free version) and a sprinkle of pumpkin pie spice on top.
I made this in my 3.5-quart slow cooker or Instant Pot.
PrintCrockpot Pumpkin Spice Latte
- Total Time: 2 hours 10 mins
- Yield: 7-8 cups 1x
Ingredients
- 4 1/2 cups brewed strong coffee
- 3 cups almond milk
- 3/4 cup pure pumpkin puree (not pumpkin pie mix)
- 1/3 cup maple syrup (or honey)
- 1 teaspoon vanilla
- 1 1/2 teaspoons pumpkin pie spice OR 1/2 teaspoon cinnamon + 1/2 teaspoon ground ginger + 1/4 teaspoon cloves, 1/4 teaspoon nutmeg
Instructions
- Add all ingredients to the slow cooker. Stir to mix well.
- Cook HIGH 2 hours or LOW 4.
- Add all ingredients to the Instant Pot. Stir to mix well.
- Close lid and seal valve. Set high pressure for 3 minutes. When done, natural release 5 minutes then quick release any remaining pressure.
Optional final step: Strain the latte through a fine-mesh strainer to remove the sediment from the latte.

- Cook Time: 2 hours
