Slow cooker slawghetti is an easy and healthy recipe where broccoli slaw cooks to a soft spaghetti consistency. This simple recipe is a great low-carb, paleo, and Whole30 compatible alternative to spaghetti. The best part is you can tailor the recipe to your liking. Use your preferred ground meat and add your favorite veggies! Instructions to make this tasty one-pot meal in the Instant Pot are also included.
Ingredients For Slawghetti
The 4 main ingredients in this recipe are: 12 ounces broccoli slaw (I use store-bought), 1 pound of protein, and 28 ounces of crushed or diced tomatoes, and seasonings. Outside of that, use your creativity. For the protein, use your preferred ground meat whether it be beef, turkey, pork, chicken.
- Ground Meat
- Broccoli Slaw
- Crushed Or Diced Tomatoes
- Seasonings: dried herbs, salt, pepper
How To Make Slawghetti In The Slow Cooker
Optional but recommended: heat oil in a large skillet over medium-high heat. Add ground meat and brown the meat, crumbling as you go. Drain grease.
- Add all ingredients to the slow cooker. Stir to mix well.
- Cook HIGH 2-3 hours or LOW 4-6.
- Set Instant Pot to the saute setting. Once hot, add the oil, ground meat, onion. Cook until the meat is browned and the veggies are soft, approximately 3 to 5 minutes. Crumbling the meat as it cooks. Add the garlic and cook an additional minute. Turn off the pressure cooker.
- Stir in tomatoes. If needed, deglaze the bottom by scrapping any browned bits with a wooden spoon. Stir in all remaining ingredients.
- Close and seal vent. Select high pressure and set time for 9 minutes. When cooking time is complete, quick-release the pressure.
What is Slawghetti?
What the heck is slawghetti? Slawghetti is broccoli slaw cooked to a soft spaghetti consistency. I add my protein (usually ground meat) and vegetables to this recipe for an easy low-carb, paleo, and Whole30 compatible one-pot meal.
FAQs & Tips
- I like to use ground meat but you can also use sliced boneless, skinless chicken, beef.
- Make this vegetarian by omitting the meat all together and adding in more vegetables like portobello mushrooms or even tofu.
- I tend to always brown my ground meat before slow cooking so I can drain the grease before adding it to the slow cooker. Using the Instant Pot makes this step easy because the saute allows you to do this directly in the pot.
- Get creative! Add your favorite vegetables and use your preferred ground meat!
- I cook my slawghetti for the full 6 hours on low because I like my broccoli slaw strands to be very soft (not mushy, soft). If you like al dente strands then check on them after a couple of hours.
- I used my 3.5 quart slow cooker for this recipe. Serving a larger crowd? Double the recipe and use a 6-quart.

First off, THANK YOU! This is such a quick easy meal for a busy night, and my husband (picky), LOVES it - requests it so often, it's now in our bi-weekly rotation. Lately I haven't had the large cans of tomatoes, so I've been using one 14oz can of diced and one 14 oz can of tomato sauce. I top it with some nutritional yeast and he uses parmesan. SO good and easy in the IP!

Love this dish, are you sure the carbs are 21 grams? Seems a bit high for what the ingredients are. Thanks
