Crockpot Spaghetti Squash and Chicken + VIDEO

This easy crockpot spaghetti squash and chicken recipe is a tasty one-pot recipe. This healthy 5-ingredient meal is low-carb, paleo, and whole30 compliant.

Only 5 Ingredients

That’s right, there are only five ingredients in this slow cooker spaghetti squash & chicken recipe. Here they are: spaghetti squash, chicken, diced or crushed tomatoes, Italian seasoning, and garlic. Salt and pepper don’t count as ingredients in case you were wondering. Of course like a lot of my recipes, I encourage you to use ingredients you like and have so you might end up with more than 5 ingredients.

What Is Spaghetti Squash?

Spaghetti squash is a cucurbita pepo vegetable. In other words, it’s a squash. The seeds inside spaghetti squash are similar to pumpkin seeds. When cooked, the inside flesh is scraped into spaghetti-like strands. Hence why spaghetti squash exploded on the scene a few years ago as a popular, healthy,  alternative to spaghetti. You can cook spaghetti squash several ways, including in the slow cooker; either by itself or as a part of a recipe like you see here.

The Tomato Sauce

I like to use either diced or crushed tomatoes as the base for my sauce and then I add Italian seasonings, garlic, salt and pepper.  If you have a favorite pasta or marinara sauce (check the ingredients for compliancy if whole30) that you want to substitute, by all means do so. You can also jazz up your sauce with veggies like bell peppers, eggplant, or mushrooms. While I like it simple, I suggest you make the sauce to your liking.

Tips For A Successful Spaghetti Squash & Chicken Recipe

  • This is not a recipe that should sit on the warm setting when it’s done cooking. The squash and the chicken will continue to cook which will result in a mushy squash and dry chicken.
  • Please, please, please remember to use oven mitts or tongs when you remove the spaghetti squash from the slow cooker. It will be very hot.
  • If the squash is not soft to the touch when it’s done, then it needs to cook a little longer. Spaghetti squash does overcook! If you overcook your spaghetti squash it will turn mushy on you.

 

You will need a large 6-quart slow cooker for this recipe.

Slow Cooker Spaghetti Squash & Chicken

Ingredients

Units Scale
  • 1 spaghetti squash (approximately 2 pounds)
  • 4 chicken breasts (approximately 1 1/22 pounds)
  • 24 ounces diced or crushed tomatoes
  • 1 tablespoon Italian seasoning
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Salt & pepper to taste

Instructions

  1. Pour tomatoes into the slow cooker. Add Italian seasoning, salt, pepper, and garlic. Stir to mix well.
  2. Cut spaghetti squash in half crosswise and scoop out the seeds. Add spaghetti squash to the slow cooker, hole side down.
  3. Season chicken with salt & pepper to taste. Add chicken to the slow cooker.
  4. Cook HIGH 2-3 hours or LOW 4-6.
  5. The spaghetti squash will be hot so carefully remove it using tongs.
  6. Let the squash cool then rake a fork back and forth across the squash to remove its flesh into spaghetti-like strands.
  7. Serve with the chicken and tomato sauce on top.

Any tips on draining out the extra water from the squash once it's done cooking? Noticed it's a bit runnier than I'd like it to be...

Yeah unfortunately that tends to happen. One thing you can do it put a couple paper towels underneath the lid The paper towels will catch any excess condensation from dripping into the pot. You'll be surprised how much there is. The paper towel will be soaking wet when done. Hope that helps! xShannon
